Carrot Fries with Curry Aioli! I love french fries. One could surmise that they are easily one of my favorite foods because of the simplicity and versatility of a french fry. Think about it - there are so many different variations of french fries. From chili fries to poutine, to cheese fries to just having fries with ketchup, they're all so good. It's funny because the foods that we love often don't love us back. However, these carrot fries are my contribution to making fries "healthy". At first glance, carrot fries look a lot like sweet potato fries, but I was shocked as to how much they satisfied the craving for french fries. They're practically guilt free and are certainly gluten free and vegetarian (also, if you omit the parmesan cheese and aioli, they're vegan too!). A lot of people have been talking about their poor eating habits while being stuck in the house so it's only fair that I try to promote some healthy recipes on my blog during this time. Not to mention, these are SO easy to make. It literally took 5 minutes to cut up and season the carrots and 20 minutes to roast in the oven.
I hope that everyone is staying sane during this time. It's been challenging to stay in the house especially because I'm so used to traveling for work! My husband and I have been watching movies and playing board games and enjoying each other's company. We've also started working out and holding each other accountable for doing so - well let me clarify, he always works out. I started working out again and he continued to do so. With so much going on, I'm finding that healthy distractions from the media are truly helping with keeping us going and preventing us from falling into a negative state of mind. My husband recently started meditating and I've been focusing on my photography and trying to get better at delivering better content for my recipes. Little things like this really help to keep us going. I hope that this little tid bit is able to help anyone who may be struggling mentally while trying to get through this challenging time!
