This Honey Garlic Chicken with Peach Salsa is nothing short of amazing. Seasonal, quick, super flavorful, and best of all – nothing but wholesome ingredients. The honey garlic chicken is marinated in just a few seasonings, olive oil, and lemon. The peach salsa is comprised of canned or jarred peaches, jalapenos, cilantro, and mint and a few other ingredients that make this salsa pop. Using canned California peaches means you can enjoy this delicious salsa all year round! 

When you pair the two together, woooo – it’s a win. A major win. Let’s talk about it.

I love sweet and savory flavors. From my baked honey garlic chicken thighs to one of my favorite and most popular recipes – honey za’atar chicken, this sweet and savory gig is a lifestyle! lol No but seriously, I love to mix up flavors that you wouldn’t normally associate with one another. Specifically, with this honey garlic chicken with peach salsa, all of the ingredients come together SO well. It makes this dish a masterpiece.

As I mentioned, this recipe is super simple. Season the chicken, sear, and then bake/roast in the oven. For the salsa, chop up the ingredients and combine. Put the two together and you’re done! Start to finish, this recipe takes about 40 minutes.

What do i need to make this recipe?

You’ll need a few simple ingredients listed in the recipe card. As far as equipment, I listed a couple things below that’ll help this recipe come together seamlessly.

How to make honey garlic chicken with peach salsa

  • Marinate chicken in olive oil, lemon juice, honey, smoked paprika, garlic, and thyme (for about 30 minutes to an hour)
  • Preheat oven to 425 degrees F. Then sear chicken in a skillet until browned on both sides.
  • Place chicken on a baking sheet with the remainder of the marinade and cover with aluminum foil. Bake for 25 minutes.
  • Cut up all of the ingredients for the salsa and combine in a bowl. Squeeze lime juice on top with olive oil and season with salt and chili powder. Mix together and add to the top of the chicken breasts and eat up!

What to serve with honey garlic chicken

There’s so many foods that will pair well with this dish. What did we serve with it? I had some tortilla strips and cauliflower rice. You can also serve with rice, roasted potatoes, and/or a side salad. If you’re really feeling up to it, you can chop up the chicken breast and add the salsa and chicken strips to a tortilla and make a wrap out of it. You can also drizzle some of this honey bbq sauce on top for extra flavor!

Ingredients 

  • 4 Boneless Skinless Chicken breasts
  • 2 tbsps Fresh Thyme 
  • 5 cloves Garlic, diced
  • 2 tsps Smoked paprika 
  • 1/2 cup Olive oil 
  • 3 tbsp Honey
  • 1 Lemon, juiced
  • Salt and pepper 

Peach Salsa

  • 2 15 oz cans California cling peaches, sliced
  • 1 jalapeño, diced
  • 1/4 cup cilantro, chopped
  • 2 tbsps fresh mint, chopped 
  • 1/2 red onion, diced
  • 1 cup grape tomatoes, cut into quarters 
  • 2 tsps Chili powder
  • 2 limes, juiced
  • 3 tbsps Extra Virgin Olive oil
  • Salt, as desired

Instructions 

  • In a large bowl, combine thyme, garlic, smoked paprika, olive oil, honey, and lemon juice. Season chicken with salt and pepper and submerge in the marinade. Cover with plastic wrap and let the chicken sit in the refrigerator for 30 minutes to an hour.
  • Preheat oven to 425 degrees F.
  • Add 1-2 tbsps of olive oil to a skillet and warm over medium high heat. Sear chicken on both sides until browned. Add to a baking sheet and pour remainder of marinade on top. Cover with aluminum foil and bake for 25 minutes, until chicken is cooked thoroughly.
  • While chicken is cooking, chop peaches, jalapenos, cilantro, mint, red onion, and grape tomatoes. Combine in a bowl and top with chili powder, lime juice, extra virgin olive oil, and salt. Mix together.
  • Top chicken with peach salsa and enjoy!

    I had a gifted jar of peach salsa and this was a great use for it. My only cavet is that the amount of marinade is excessive. I cut in half and felt it could be decreased even more (maybe 1/4). The sauce was good there was just too much and I don’t like to waste food/ingredients!
