Prosciutto wrapped Chicken with Fig Glaze - Tender chicken seasoned to perfection, topped with blue cheese and wrapped in prosciutto. The juices are then reduced and caramelized with a little fig jam. It's sweet and savory heaven.

I love this recipe because it's balanced. The blue cheese provides a good acid, the prosciutto is nice and salty and savory. Fig jam provides a hint of deep sweetness and the chicken brings it all together. I also added some white wine and butter for good measure to enhance the flavors of the sauce. When everything comes together, it's truly delicious.

Also, this recipe is SO easy. Everything is done in the oven and then finished on the stovetop to make the fig glaze. I used my handy dandy cast iron skillet from Calphalon to ensure I got a good even roast and the added flavor from the pan (nothing like a good pre-seasoned cast iron pan, am I right or am I right?). That evenly heated surface made making this recipe a breeze!

So with the holidays in full swing, I must say that I'm testing my holiday recipes daily. Daily. Why? Because Christmas is going to be at my house this year and it has to be PERFECT. I had thanksgiving this year too, but Christmas is always the holiday that's the big deal in my family.

Everyday I'm in the kitchen testing and perfecting recipes. And this one will be on my holiday table.

To further the point, when I made my Prosciutto and Sage Croissant Stuffing for Thanksgiving, my family lost their minds. They were mind blown as to how good it was. I'm aiming for that same reaction for this Prosciutto wrapped chicken.

Again, the sweet and savory vibe is what it's all about. Can I get an amen?!

Season the chicken and top it with a little bit of blue cheese. Then wrap the chicken in prosciutto. Place the chicken in your Calphalon cast iron skillet and add some red onion and fresh thyme. Then add white wine and top with butter.

Roast the chicken for about 30 minutes in the oven. Once the chicken is done, remove the chicken and onions from the skillet and place on a plate. Put the skillet on the stove over medium heat and add fig jam and allow the sauce to reduce into a thick glaze.

Add the chicken back into the skillet and spoon the glaze on top. Then you're done - time to eat up!

I plan on making this with my brown butter garlic and herb mashed potatoes. Everyone LOVES this recipe and I think that this recipe would pair perfectly.

You can also serve this with a salad. Brussels Sprouts would go well with this dish too!

For wine pairing, you'll want to serve this with a dry red wine to play on the savory notes!

Equipment

  • 12-inch cast iron skillet

Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • 2 tsps Smoked Paprika
  • 2 tsps Onion Powder
  • 1 tbsp Parsley
  • 4 cloves Garlic, diced
  • Salt and Pepper, as desired
  • ¼ cup Blue Cheese
  • 6-7 pieces Prosciutto
  • ½ Red Onion, sliced
  • ½ cup White Wine
  • 1 tbsp Fresh Rosemary, diced
  • 5 tbsps Salted Butter
  • 2 tbsps Fig Jam

Directions

  • Preheat the oven to 425 degrees F. Season chicken with smoked paprika, onion powder, parsley, and salt and pepper. Sprinkle blue cheese on top of the chicken and wrap each piece with prosciutto.
  • Place chicken in and place sliced butter on top. Add red onion, white wine, and fresh rosemary to the pan. Roast in the oven for 35 minutes, until chicken is done.
  • Remove chicken from the skillet and add fig jam into the broth. Place skillet on the stove over low heat until broth thickens and fig jam is mix into the sauce. Spoon glaze on top of chicken and garnish with fresh herbs.

    This was delicious and way easier than I expected - looks fancy but simple to execute. I used goat cheese instead of blue (no blue cheese fans in my fam) and it worked great. Will make again!
