Anyone else finally excited to get back out into the world after lockdown and enjoy some good times with friends and family? I know that we certainly are. Recently, we've been driving all up and down the east coast visiting folks we haven't seen since before the pandemic.

What comes with visiting friends and family? Cooking of course. And lots of it. I made these Grilled Pineapple Chicken Skewers for my parents last weekend using my Calphalon grill pan. Because I live in an apartment building (ETA on the house is this Fall!), access to grills are limited. So, I whipped out my handy dandy grill pan and brought the cookout indoors. It was magical.

Imagine this, achieving that grilled taste without being outside in the heat all day. I truly felt spoiled because this recipe came out SO good.

I've been thoroughly enjoying all things summer. The weather, the longer sunny days, and most importantly - all of the fresh produce. Every time summer rolls around, I'm always looking for ways to incorporate fruit into savory dishes. Check out my Honey Salmon Skewers with Zucchini and Grapes and my Prosciutto wrapped Chicken with Peaches.

While perusing the grocery stores, I came up with the idea to make a savory pineapple recipe. I figured this grilled pineapple chicken skewer recipe would be absolutely perfect.

how do you make GRILLED PINEAPPLE CHICKEN SKEWERS?

This recipe comes together in about 20 minutes. Super simple, check out the steps below.

  • Simply cut the pineapples and peppers into bite size pieces, cut chicken breasts into cubes, and season. Note: If you're using wooden skewers, soak them in water for 30 minutes prior to using.
  • Add peppers, pineapples, and chicken to a skewer and repeat until all of the ingredients are used up.
  • Grab your Calphalon Nonstick Hard-Anodized Grill Pan and spray with a little oil over medium high heat.
  • Cook about 2-4 skewers at a time until chicken is cooked thoroughly, roughly 10 minutes.

cilantro lime rice? Yum!

So the cilantro lime rice that I paired with the Grilled Pineapple Chicken Skewers is a bit of a fusion of flavors. It's got some coconut milk and fresh lime juice. I added this because it paired so well with the sweet pineapples!

Because I suck at making rice, I used a rice cooker. I used jasmine rice and combined full fat coconut milk, lime juice, water, and salt. Close the lid and let the rice cooker do its thing. Then chop up some cilantro and toss everything together. Of course, you can always cook the rice stove top, but the rice cooker is a no-fail method I've used for years. It works every single time!

how long do you cook the chicken skewers?

Cook the grilled pineapple chicken skewers for about 3 minutes on each side for a total of 8-10 minutes. Ensure that the chicken is thoroughly cooked, however, be sure not to overcook the chicken. It's easy to do. If you have a meat thermometer, check the internal temperature of the meat to ensure it's reached 165 degrees F at the thickest section of the meat.

This will ensure doneness.

how long do you soak wooden skewers?

To prevent the skewers from burning when you cook/grill them, soak the wooden skewers in water for about 30 minutes. You can soak them up to 24 hours. This makes it so that the skewers soak up as much water as possible so that when you're using your Calphalon grill pan, the wooden skewers are less like to burn.

Ingredients

  • 2-3 Boneless Skinless Chicken Breasts
  • 1 cup Pineapple Chunks
  • 4 Bell Peppers, assorted colors
  • 2 tsps Smoked paprika
  • 2 tsps Garlic Powder
  • 1 tsp thyme
  • 1 tbsp Honey
  • 1 tbsp Apple Cider Vinegar
  • Drizzle of Olive Oil
  • Salt and Pepper, to taste

Cilantro Lime Rice

  • 1 ½ cups Jasmine Rice
  • 1 13.5 oz can Full Fat Coconut Milk
  • 2 limes, juiced
  • ½ cup water
  • 1 tbsp sugar
  • ¼ cup Cilantro, diced
  • salt, as desired

Directions

  • If using wooden skewers, soak skewers for 30 minutes prior to using.
  • Cut peppers and chicken in to bite size pieces. Set peppers aside and add chicken to a large bowl. Add smoked paprika, garlic powder, thyme, honey, apple cider vinegar, olive oil, and salt and pepper to chicken. Mix together to combine.
  • Add chicken, peppers, and pineapples to a skewer. Repeat until all ingredients are used.
  • Spray a with oil and add 2-4 skewers to the pan. Cook on each side for about 3 minutes, totaling 10 minutes. Cook until chicken is cooked thoroughly.
  • For the cilantro rice, combine all ingredients in a rice cooker and cook according to your machine's insructions.
