Anyone else finally excited to get back out into the world after lockdown and enjoy some good times with friends and family? I know that we certainly are. Recently, we've been driving all up and down the east coast visiting folks we haven't seen since before the pandemic.
What comes with visiting friends and family? Cooking of course. And lots of it. I made these Grilled Pineapple Chicken Skewers for my parents last weekend using my Calphalon grill pan. Because I live in an apartment building (ETA on the house is this Fall!), access to grills are limited. So, I whipped out my handy dandy grill pan and brought the cookout indoors. It was magical.
Imagine this, achieving that grilled taste without being outside in the heat all day. I truly felt spoiled because this recipe came out SO good.
I've been thoroughly enjoying all things summer. The weather, the longer sunny days, and most importantly - all of the fresh produce. Every time summer rolls around, I'm always looking for ways to incorporate fruit into savory dishes. While perusing the grocery stores, I came up with the idea to make a savory pineapple recipe. I figured this grilled pineapple chicken skewer recipe would be absolutely perfect.
This recipe comes together in about 20 minutes. Super simple, check out the steps below.
So the cilantro lime rice that I paired with the Grilled Pineapple Chicken Skewers is a bit of a fusion of flavors. It's got some coconut milk and fresh lime juice. I added this because it paired so well with the sweet pineapples!
Because I suck at making rice, I used a rice cooker. I used jasmine rice and combined full fat coconut milk, lime juice, water, and salt. Close the lid and let the rice cooker do its thing. Then chop up some cilantro and toss everything together. Of course, you can always cook the rice stove top, but the rice cooker is a no-fail method I've used for years. It works every single time!
Cook the grilled pineapple chicken skewers for about 3 minutes on each side for a total of 8-10 minutes. Ensure that the chicken is thoroughly cooked, however, be sure not to overcook the chicken. It's easy to do. If you have a meat thermometer, check the internal temperature of the meat to ensure it's reached 165 degrees F at the thickest section of the meat.
This will ensure doneness.
To prevent the skewers from burning when you cook/grill them, soak the wooden skewers in water for about 30 minutes. You can soak them up to 24 hours. This makes it so that the skewers soak up as much water as possible so that when you're using your Calphalon grill pan, the wooden skewers are less like to burn.
