Grilled Pineapple Chicken Skewers with Cilantro Lime Rice

- 2-3 Boneless Skinless Chicken Breasts
- 1 cup Pineapple Chunks
- 4 Bell Peppers, assorted colors
- 2 tsps Smoked paprika
- 2 tsps Garlic Powder
- 1 tsp thyme
- 1 tbsp Honey
- 1 tbsp Apple Cider Vinegar
- Drizzle of Olive Oil
- Salt and Pepper, to taste
Cilantro Lime Rice
- 1 ½ cups Jasmine Rice
- 1 13.5 oz can Full Fat Coconut Milk
- 2 limes, juiced
- ½ cup water
- 1 tbsp sugar
- ¼ cup Cilantro, diced
- salt, as desired
If using wooden skewers, soak skewers for 30 minutes prior to using.
Cut peppers and chicken in to bite size pieces. Set peppers aside and add chicken to a large bowl. Add smoked paprika, garlic powder, thyme, honey, apple cider vinegar, olive oil, and salt and pepper to chicken. Mix together to combine.
Add chicken, peppers, and pineapples to a skewer. Repeat until all ingredients are used.
Spray a with oil and add 2-4 skewers to the pan. Cook on each side for about 3 minutes, totaling 10 minutes. Cook until chicken is cooked thoroughly.
For the cilantro rice, combine all ingredients in a rice cooker and cook according to your machine's insructions.
