Who doesn’t love baked chocolate chip cookies? The scent alone brings back childhood memories of waiting for a sweet treat to come out of the oven. In just a matter of minutes, you will have all the flavor you love from chocolate chip cookies baked into a delicious bar.
Chocolate Chip Pecan Oatmeal Bars has everything I love most about homemade cookies; gooey dark chocolate chips, nestled in warm, chewy oatmeal with chunks of toasted nuts. Serve them at your next get-together and watch how fast they go!

Chocolate Chip Pecan Oatmeal Bars ingredients
The great thing about this recipe is that you more than likely already have everything you need already stocked in your kitchen!
- Butter: Use room temperature butter in order for it to cream properly.
- Sugars: I used both brown and granulated sugar although I used more brown sugar than white, for added moisture and color.
- Vanilla extract: This enhances the flavor of the dessert.
- Eggs: This contributes to the structure of the cookie. Without it, the bars are crumbly.
- Old Fashioned Oats: I used these for added density. You can use quick cooking oats in a pinch but the texture will vary.
- All Purpose Flour: This is a necessary ingredient for baked goods.
- Baking soda: Double check the expiration date. Expired baking soda can still be used but may result in flat cookies with less texture. We want our Chocolate Chip Pecan Oatmeal Bars to be chewy!
- Kosher salt: Add just enough for taste.
- Pecans: Nuts are delicious but totally optional. If pecans aren’t your thing, substitute with walnuts, almonds, or macadamia nuts.
- Dark Chocolate Chips: These add some nutrients and cuts back on some of the sugar in milk chocolate chips. Dark chocolate also has a richer taste. But milk chocolate, white chocolate, or semi-sweet chocolate chips would work well in this recipe too.

Tips for baking Chocolate Chip Pecan Oatmeal Bars
- Brown the butter prior to mixing and baking for an added depth of flavor.
- Let them cool before slicing or they will far apart.
- In order to cut them perfectly every time, use a ruler than mark it with toothpicks. Use a serrated knife.
Why are my cookie bars tough?
Avoid tough or dry Chocolate Chip Pecan Oatmeal Bars by measuring flour correctly. Here is a step-by-step tutorial on how to properly measure flour!
Also, do not overmix the dough. As soon as the flour is fully incorporated, stop mixing! Give it a quick fold to make sure that there’s no dry spots on the bottom of the bowl and you’re done!

Storing leftovers
If you have leftovers (how?!) let the bars cool before storing them. Place them in an airtight container on the counter for up to 4 days.
You can also freeze them. Cut them into bars then store them in a freezer-safe container for up to two months. When you are ready to enjoy them, just thaw and serve!

Chocolate Chip Pecan Oatmeal Bars

Ingredients
- 1 cup Butter, room temperature (2 sticks)
- 1 cup Brown Sugar
- 1/2 cup Sugar
- 1 tbsp Vanilla extract
- 2 Eggs
- 2 1/2 cups Old fashioned oats
- 1 3/4 cup All-purpose flour
- 1 tsp Baking soda
- 1 tsp Kosher salt
- 1 1/2 cup Pecans, chopped
- 2 cups Dark chocolate chips
Instructions
- Preheat oven to 350 degrees F. Add butter, brown sugar, and sugar to a stand mixer with the paddle attachment and beat on medium speed for 3-4 minutes, until combined and fluffy. Scrape down the sides of the bowl as needed. Add each egg, one at a time. Then add vanilla extract.
- Add oats, flour, baking soda, and salt to the mixture and continue to mix until just combined. Then add pecans and dark chocolate chips. Continue to mix until added ingredients are evenly distributed, about 20 seconds.
- Spray a 9×13 baking pan with baking spray or line with parchment paper. Spread dough evenly across the pan.
- Bake for 25-28 minutes. Allow bars to set for at least 15 minutes.

I had so much fun making these oatmeal bars with the kids! Not only do they taste amazing but they are also very easy to make.
This recipe was spot on! I had my niece, nephew and three-year-old daughter to entertain and luckily, I had all the ingredients on hand. We turned this into a fun project to create together and the results were as pictured and mentioned in the recipe. The oatmeal bars were chewy, moist and down right delish! Will be making these again, perfect for snacking throughout the week!

I’m a lover of oatmeal but didn’t think to include chocolate chips or pecans. The bars were sweet and savory gooey perfect, and pecans were the perfect crunch.

These are delicious! Super chewy, gooey and delicious. Adjustments we made – ran out of chocolate chips so did some chocolate chips and some M&Ms. I also added a quick crumb topping on top and it was a fun addition. Kids loved them!
