Do you remember my Chocolate Chip Skillet Cookie? Well this S’mores Stuffed Chocolate Chip Skillet Cookie is just like it – except with a little more pizazz. This skillet cookie is the epitome of decadent. From the gooey marshmallow center to the crunchy graham crackers to the chocolate chip cookie that surrounds it. It’s just so freaking delicious. And super easy to make. Top with a little ice cream and you’re in for a real treat with this one.

s’mores always remind me of summer

When I was nine, I went to horse back riding overnight camp. This is the true inspiration behind this S’mores Stuffed Chocolate Chip Cookie. The camp was up in the Poconos and the heat was scorching during the day, but fairly pleasant at night. They taught me how to ride the horses and how to take care of them and feed them etc. We’d take the horses out on trails and then go swimming. It was so much fun.

On the last day of camp, we made toasted marshmallows and put them on graham crackers with chocolate – which I later came to know were called s’mores. I loved the gooey charred taste of the marshmallows. That caramelized, slightly burnt flavor complimented the chocolate and graham cracker SO well. So, I figured why not combine the two to make this S’mores Stuffed Chocolate Chip Skillet Cookie?

why are s’mores called s’mores?

S’mores is simply a shortened version of “some more”. The term first popped up in a cookbook in the 1920s but didn’t stick until around the 1950s.

What’s even more cool, on par with my camp theme, is there the S’mores were actually coined as a recipe for campers because it was fun to roast marshmallows over a camp fire. Also, because the ingredients were so simple and didn’t spoil easily, it became an ideal treat for outdoor activities. So grab your simple ingredients and make this S’mores Stuffed Chocolate Chip Skillet Cookie!

It’s super simple and actually quite fun to make this S’mores Stuffed Chocolate Chip Skillet Cookie.

First make the chocolate chip cookie dough and use half of it to line the bottom of a cast iron skillet. Top the cookie dough with graham crackers and marshmallows and additional chocolate chips. Then cover the marshmallows with the remainder of the chocolate chip cookie dough.

Bake the skillet cookie for about 20-25 minutes, until the top is slightly browned/golden. Here’s the tricky part – let the skillet cookie rest for 30 minutes. The cookie is still cooking on the inside and if you cut it too quickly, it’ll be super gooey. That is of course, if you prefer it to be gooey, go right ahead and dig in!

Ingredients 

  • 1 cup Salted Butter, (room temperature)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tbsp vanilla extract 
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda 
  • 1/2 tsp salt 
  • 12 oz semi sweet chocolate chips (1 bag)
  • 8 sheets Honey Graham crackers, (broken into pieces)
  • 12 oz Marshmallows

Instructions 

  • Preheat oven to 350 degrees F.
  • In the bowl of a stand mixer using the paddle attachment, beat butter and sugar together. Add vanilla extract and then the eggs, one at a time.
  • In a separate bowl, combine flour, baking soda, and salt. Whisk together and add to the butter mixture and beat until combined, about 15-20 seconds. Then add 1 1/2 cups of semi-sweet chocolate chips and fold together.
  • Add half of the dough to the bottom of a cast iron skillet. Top with graham crackers until the bottom layer is covered, about 4-5 sheets. Then add marshmallows to cover the graham crackers. Sprinkle in remaining chocolate chip cookies. Add remaining cookie dough to cover the marshmallows.
  • Bake for 20-25 minutes, until the top of the cookie is golden brown.
  • Let the cookie cool for 30-45 minutes to set.

    Omg, this was so good! Made this yesterday and it is the perfect gooey, sweet, indulgent easy treat for summer. The oven isn’t on for too long, so it won’t heat your house up too badly – perfect for summer!
