This creamy mushroom chicken is a recipe that the whole family will love! It's a one-pan skillet meal made with boneless skinless chicken breasts seasoned with herbs, seared with bacon until golden brown, and cooked with garlic, onions, and mushrooms.

Then, a quick creamy mushroom sauce is made with heavy cream, dijon mustard, and butter for a flavor-filled dish that's perfect for any night of the week. This flavorful creamy chicken recipe will be a new family favorite!

So this recipe is something that I came up with after my trip to California Grown's Agritour. We visited a mushroom Farm, Far West Fungi, and literally learned about everything mushroom.

I'm talking from seed to table, it was mushroom paradise. So when I came home, I had to make a mushroom dish.

The Best Creamy Mushroom Chicken Ever!

Juicy pan-fried chicken breasts all cooked in a cast iron skillet with bacon and then finished with a little creamy white wine sauce with garlic, onions, and mushrooms- you really can't go wrong.

Make this creamy mushroom chicken recipe for the mushroom lovers in your life. They'll be hooked!

Ingredients

These simple ingredients are easy to find at grocery stores and are pantry staples. You'll have food on the dinner table in no time!

  • Bacon - here's the kicker. I crisped up some sliced bacon and rendered off the fat to sear the chicken instead of using olive oil. It adds SO much flavor.
  • Chicken - I used boneless skinless chicken breasts but you can use whatever cut you like. Skinless chicken thighs would be delicious with this recipe.
  • Herbs de Provence - one of my favorite spice blends because it's got all of the good stuff in one bottle.
  • Diced Fresh Garlic and Onions - what's a recipe without garlic and onions? Tip: be sure to dice finely to get all of the flavor!
  • California Baby Bella Mushroom - also known as baby portobello mushrooms - they have such a beautiful silky texture that goes so well with this delicious recipe.
  • California White Wine or Chicken Broth - this is added to finish cooking the chicken so that it won't dry out. I used California Wine's Pinot Grigio! If you like juicy chicken - don't forget this step.
  • Heavy cream, Dijon Mustard, and Butter - these ingredients make the creamy garlic mushroom sauce.
  • California leafy greens for serving the final dish!

Garnish with fresh parsley or any of your favorite fresh herbs!

How to make Mushroom Chicken

Let's make this chicken mushroom recipe!

  • Season chicken with Herbs de Provence, salt, and pepper.
  • Add sliced bacon into a large 12-inch skillet over medium low heat. Then cook undisturbed for 10-15 minutes, until crispy and the fat has rendered. Remove crispy bacon bits from the pan and set aside. Leave the bacon fat in the pan.
  • Increase heat to medium and sear the chicken on both sides, about 4 minutes per side. Remove chicken and set aside.
  • Add diced onions to the pan and saute until browned and fragrant. Then add garlic and mushrooms and cook together for 5 minutes.
  • Add white wine or chicken broth and place chicken breasts back in the pan. Reduce heat to simmer and cover with a lid. Simmer for 15-20 minutes, until chicken is cooked thoroughly. Remove cooked chicken from the pan and place chicken on a serving plate. (leave the mushrooms and onions in the pan)
  • Next, make the garlicky mushroom sauce. Add heavy cream and dijon mustard to the pan. Stir together with the mushrooms and onions and garlic and cook for about 5 minutes, until the sauce has thickened. Remove from the heat and add butter and stir until butter is melted. Spoon the sauce on top of the chicken and serve.

What to eat with this Chicken Mushroom Recipe

There's so many delicious ways to enjoy this recipe. My favorite side would have to be my brown butter garlic and herb mashed potatoes. It pairs so well with the flavors. Serve that with these rosemary dinner rolls or these Easy Homemade Biscuits and you've got a meal fit for a king! If you're like me and love bacon, try these Bacon Cheddar and Thyme Biscuits too, they're incredible.

For a lighter dish, serve with a California leafy green side salad. If you'd like a cocktail pairing, make sure you try this with my Bourbon Smash - it would go perfectly with the savory flavors of this recipe.

It's all about the Mushrooms!

Let's talk about my California Grown Agriculture Tour, it's where I learned about all things mushrooms, artichokes, farming, and ate some really delicious food (and wine) in the midst!

This trip was particularly special because this was my second agriculture tour, but my first one in person!

First stop was a trip to Far West Fungi (the inspo behind this creamy mushroom chicken recipe), where we learned so much about mushrooms - from how they are grown, the types of soil used, how to protect the mushrooms from contaminants, and even got a full tour of their facility.

They grow 12 different kinds of mushrooms! Seeing all of the mushrooms was insane because I had no idea how much went into mushroom growing, let alone farming in general. It truly gave me an even deeper appreciation for food.

Best part - they sent us home with a mushroom kit to recreate the experience at home. I have to send a huge thank you to California Grown for an unforgettable experience!

Tips

  • Double the ingredients for the garlic cream sauce and add pasta for a creamy garlic mushroom recipe with pasta!
  • Be sure to use a 12-inch skillet for this recipe. I tested this in a 10-inch skillet and the pan became crowded. For the best results, a large skillet is preferred.
  • Use boneless chicken thighs instead of chicken breasts if you prefer dark meat.
  • If the chicken breasts are very large, cut the breasts into your own chicken cutlets for a quicker cook time.

This easy recipe can be customized to your liking. See below!

  • If you don't have bacon or don't eat pork, omit the bacon and simply cook in olive oil.
  • For dairy free options, use canned coconut milk instead of heavy cream and swap butter for a non-dairy butter.
  • For an alcohol free version, use chicken broth instead of white wine.

What type of wine should I use?

I recommend using a dry white wine such a chardonnay, sauvignon blanc, or pinot gris.

How do you thicken mushroom sauce?

The sauce for this recipe thickens as you cook it due to evaporation. However, if you'd like an even thicker sauce, add 1 tsp of flour or cornstarch and whisk in the pan until smoothed and thickened.

Equipment

  • 1 12-inch Skillet

Ingredients

  • 4 slices Bacon (sliced into bits)
  • 4 pieces Chicken Breasts
  • 1 tbsp Herbs de Provence
  • Salt and Pepper (to taste)
  • 4 cloves Garlic (diced)
  • ¼ White Onion (diced)
  • 1 ½ cups California Baby Bella Mushrooms (sliced)
  • 4 sprigs Fresh Thyme
  • 1 cup California White Wine (or chicken broth)
  • ¼ cup Heavy Cream
  • 2 tbsps Dijon Mustard
  • 2 tbsps Salted Butter
  • California Leafy Greens , for serving

Directions

  • Pat chicken dry with a paper towel. Season chicken with Herbs de Provence, Salt, and Pepper.
  • Over medium low heat, add sliced bacon to the skillet and allow bacon to cook slowly until crispy and fat has rendered out - about 10 minutes. Remove bacon bits and set aside.
  • Increase heat to medium high and add chicken breasts to the pan and sear on both sides until golden brown - about 4 minutes per side. Remove from the pan and set aside.
  • Add onions to the pan and saute until softened and fragrant, about 3 minutes. Then add diced garlic, mushrooms, and thyme and continue to cook for 5 minutes. Season with salt and pepper.
  • Add chicken breasts back into the pan and along with white wine or chicken broth. Cover with a lid and cook until chicken breasts are cook thoroughly, about 20 minutes.
  • Once finished, remove chicken from the pan. Reduce heat to low and add heavy cream and dijon mustard and cook until slightly thickened, about 5 minutes. Then add butter and mix together in the pan until butter has melted. Add chicken breasts back in and sprinkle with the bacon.

  1. Thanks, Britney! When I made this last night, I didn't measure, but no doubt put more than 1 cup of chicken broth in... LOL I had 2 thin chicken breasts and 4 fat chicken thighs, so I wanted to cover them at least halfway in the pan. OMG, what a feast of flavors! Wonderful combo.

    The breasts were a little dry, so I probably should have browned them for less time.
