Bacon Cheddar and Thyme Biscuits

Bacon Cheddar and Thyme Biscuits are my ode to biscuit making. I've ALWAYS struggled with making biscuits - but these? I've finally perfected. Just the perfect amount of each ingredient to maximize taste, ensure cheesiness (is this a word?) and still get that fluffy buttery texture that we all know and love. Not to mention, bacon bits in every bite?! You can't go wrong. Another ingredient that I love to use that really adds a beautiful flavor here is thyme. It adds such character and depth to these biscuits. You'll be making this recipe over and over and over again!

What is it about biscuits that makes them so addictive? Is it the fluffy texture? The buttery flavor? Or is it the nostalgia of it all? If you're anything like me, biscuits reminds me of my childhood. I remember having my first biscuit and thinking, "hmmm this is dry. I don't like it." So, I went YEARS thinking that I didn't like biscuits until about 5 years ago. Fast forward, I was down south in the Outer Banks with my husband. We went to a breakfast spot and he was so excited when he saw biscuits and gravy on the menu. I told him "I don't really like biscuits". He said HOW?! You have to try my biscuits and gravy. With a bit more prompting and the allure of eating my husband's food, I took a bite.

I don't know what I tried as a child, but that wasn't a biscuit. Ever since, I have been trying to re-create that recipe. I have stumbled A LOT. Prior attempts at baking biscuits have not been terrible but they just weren't... great. I have found that biscuit dough (when using other recipes) has been a bit difficult to work with. They were either too crumbly or too wet. I am happy to report, however, with these Bacon Thyme and Cheddar biscuits - I found the sweet spot!!

When I tell you these are the perfect biscuits - I cannot stress it enough! My husband said that these remind him a bit of pao de queijo (a Brazilian cheese bread that we LOVE - if you know you know!). I am totally flattered at that comparison because it's such a delicious bread. However, this recipe is a lot easier and has completely different ingredients. I wasn't aiming to make a copy of pao de queijo with this recipe but if it tastes reminiscent of that, hey, I'm with it!

So let's talk about how to make these bacon thyme cheddar biscuits. When I tell you that I did all of the hard work trying to make this recipe pretty seamless, I really mean it! I tried so many times making those really complicated biscuit recipes and they just didn't work. This recipe is here to take ALL of the mind work out of baking and make it so that you enjoy baking these biscuits.

So, stay tuned. This goes by pretty quickly! First, you cook the bacon. I like my bacon crispy so I cook it until it's nice and golden. Set it aside and let it cool a little. Add flour, salt, baking powder, and COLD butter to a food processor. Blend until the butter and flour form small pea size morsels. Then add cheese, bacon strips, and fresh thyme. Continue to mix and slowly begin adding 1 cup of milk while the food processor is still going. Once all of the milk is added, let the dough form a bit and then stop.

Turn the dough onto a floured work surface. Preheat the oven to 400 degrees F. Cut the dough into four pieces and stack them on top of each other. Then press the dough together and use a dough roller to roll the dough into a 1 inch thick rectangle. Use a circle cookie cutter (or whatever shape you'd like) and cut around 10-12 pieces. If you have leftover dough from the scraps, smoosh it together and flatten and make more biscuits.

Add biscuits to a parchment lined baking sheet and freeze for 20 minutes. Then brush with butter and baking in the oven for roughly 20-25 minutes. Allow biscuits to cool for at least 10 minutes. When you take the biscuits out of the oven, they are still cooking internally so it's important to allow them to cool properly prior to taking a bite! I promise, it's worth it!

  • If you are vegetarian and would like to make this recipe, you can use vegan bacon!
  • If you need a dairy free version of this recipe, you can use an alternative milk and vegan cheese. Both of those work as well!

  • Food Processor
  • 2 ¾ inch Biscuit Cutter
  • Baking Sheet


  • 6 pieces Bacon, cooked
  • 3 ½ cups All-Purpose Flour
  • 3 tsp baking powder
  • ½ tsp kosher salt
  • 1 cup Salted Butter (cold)
  • 2 ½ cups cheddar cheese
  • 2 tbsps fresh thyme leaves
  • 1 cup whole milk (cold)


  • Preheat oven to 400 degrees.
  • Cook bacon fully.
  • Combine flour, baking powder, kosher salt, and butter in a food processor. Pulse until there are pea size lumps. Add cheddar cheese, bacon, and thyme leaves. Pulse for an additional 20 seconds while slowly adding milk. Once a shaggy dough forms, stop.
  • Turn dough onto a floured work surface and cut dough into 4 pieces. Pile 4 pieces on top of each other and then use a dough roller to flatten into a 1 inch thick rectangle.
  • Cut 10-12 biscuits out of the dough and add to a parchment lined baking sheet. If you have additional dough from scraps, smoosh them together and flatten to make more biscuits! Freeze for 20 minutes. Brush with butter and bake for 20-25 minutes.
  • Allow biscuits to cool for 10 minutes.
