Cookie Dough Overnight Oats are a simple and delicious solution for a balanced breakfast or on-the-go snack. With ingredients like chia seeds, almond butter, and Greek yogurt, this sweet, nutritious breakfast treat only tastes like a guilty pleasure!

Want cookies for breakfast? That was the fantasy growing up. We are adults now so Chocolate Chip Cookie Dough Overnight Oats are the next best thing! It’s basically low calorie cookie dough meets oatmeal (or oatmeal cookie dough?) and it’s a match made in heaven.

When I had to commute, I loved making overnight oats the evening before work. It became somewhat of a ritual. With a base of oats, I grabbed whatever ingredients I had in my fridge and pantry to whip up something tasty for the morning.

Having a bowl of cooke dough oats with a side of coffee right at sunrise is the best! I always felt ready to conquer the day after eating such a healthy and balanced breakfast!

What is the point of overnight oats?

Convenience! If you are not a morning person, Chocolate Chip Cookie Overnight Oats are a great idea. The best part of overnight oats is that you can “set it and forget it!”

After you put the combined ingredients in the fridge, it’s just a matter of waiting. Overnight (or over the span of at least 8 hours) the oats absorb the milk and soften. The other flavors also get a chance to settle in, making for a soft, flavorful breakfast in the morning.

The hardest part is remembering to make it but that takes just minutes. And if you plan, this is an ideal way to make sure you don’t have to think about breakfast in the morning. Given the fact that so many people skip the most important meal of the day, it is a great way to ensure you eat.

If it is already portioned in a mason jar or Tupperware container, you can literally grab it and go!

  • Almond Butter: Any nut butter will do for that cookie dough taste. This is my preferred variety. 
  • Vanilla Extract: This adds a subtle sweetness that can’t be replicated using anything else.
  • Maple Syrup: This is natural way to sweeten the oats. Brown sugar, honey or agave would work too!
  • Coconut Milk: Use full fat canned coconut milk for a super creamy base.
  • Greek Yogurt: My preferred way of adding dairy to this recipe. It adds a thick, creaminess to the oats.
  • Oats: You can’t make overnight oats without these! I use old fashioned rolled oats when making Cookie Dough Overnight Oats. They are hearty yet soft with a creamy finish. Steel cut oats would work too if you prefer a chewier texture but they will need more time to soak.
  • Hemp and Chia Seeds: They thicken the oats and keep you full for longer.
  • Salt: Just a dash for taste.

Tips

  • Be sure to use old fashioned oats and not quick oats or steel cut oats! Quick oats and steel cut oats don’t absorb liquid well and while they’re great in other recipes, it leaves overnight oats soupy.
  • Add a nut butter for a little extra flavor like with my almond butter overnight oats.

How long do overnight oats last in the fridge?

After I assemble the Cookie Dough Overnight Oats in a large bowl, I portion them out equally amongst 4-5 mason jars. In order to “cook” them overnight, I set them in the refrigerator for at least 8 hours. After this point, you can eat them at any time! I have found that overnight oats can last in the fridge for up to 3 days.

Why not use quick oats for cookie dough overnight oats?

I would not use quick or instant oats for Cookie Dough Overnight Oats. They would probably break down completely during the soaking process, leaving you with mush. Learn from my mistakes; old fashioned oats are best!

Are overnight oats healthy?

Overnight oats are definitely good for you. During the soaking process, the starch is broken down, making it easier for the oats to absorb nutrients. They are full of protein, minerals, vitamins, and fiber. That fiber prevents you from getting hungry for up to 5 hours. Also, if you want added protein, add a tablespoon or two of peanut butter and make these into peanut butter cookie dough overnight oats 🙂
And because they are soaked for an extended amount of time, overnight oats are very easy for the body to digest. Due to that soft, mushy texture, your buddy can easily absorb all of those good nutrients. In addition, while the oats are soaking overnight, they begin to ferment. The fermentation process yields healthy gut bacteria which supports colon health and digestion.

Ingredients 

  • 1/3 cup Almond butter 
  • 2 tsp Vanilla extract 
  • 1/3 cup Maple syrup
  • 14 oz Coconut milk, can
  • 1/2 cup Milk of Choice
  • 1/3 cup Greek yogurt 
  • 1 cups Oats
  • 2 tbsp Hemp seeds
  • 3 tbsp Chia seeds 
  • Pinch of salt

Instructions 

  • Add almond butter, vanilla extract, maple syrup, canned coconut milk, and Greek yogurt to a bowl. Whisk together until all ingredients are incorporated. 
  • Add oats, hemp seeds, chia seeds, and a pinch of salt. Fold together. Cover with a lid or plastic wrap and add to the refrigerator for at least 8 hours/overnight
  • Enjoy with yogurt or by itself!
