When I tell you that baked brie in puff pastry is one of my favorite appetizers - I cannot stress it enough. It's the perfect appetizer for a holiday party, but also petite summer gathering with a nice glass of white wine.
If you're never had baked brie - imagine this. Gooey melted cheese with caramelized onions and prosciutto, a little rosemary, and a touch of jam all baked in a flaky puff pastry.
What is brie en croûte?
Baked baked is an easy appetizer recipe where you wrap brie in puff pastry and bake it in the oven. It's typically paired with a jam, herbs, and nuts and enjoyed with crackers or sliced bread or eaten as is.
Ingredients and Substitutions
Puff Pastry Sheet - no need to make homemade puff pastry, this is meant to be quick and easy. Use store-bought puff pastry instead. I used a pepperidge farms sheet of puff pastry that I picked up from my grocery store. It's never failed me. If you don't have puff pastry, you can use pie crust instead.
Wheel of Brie Cheese - use a 8oz to 12oz wheel of brie for this recipe, I found that larger wheels tend to ooze out of the puff pastry when baking. I do not recommend using a wedge of brie as the sides have already been cut and the cheese will leak out when baking.
Yellow Onion - all you need is one small onion to make the caramelized onions.
Prosciutto - to add a savory and salty component to compliment the creaminess of the cheese.
Apricot Preserves- feel free to get creative here. You can also use fig jam, raspberry jam, or even cranberry jam during the holidays. I used strawberry jam in my baked brie with jam recipe and wanted to try something different so I used apricot jam and it came out so good! You can also use maple syrup or honey.
Rosemary - the herby flavor of the rosemary really pulls all of the flavors together and gives this dish so much character. It's an absolute must!
How to make Baked Brie in Puff Pastry
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.
Start by caramelizing the onions. Add olive oil and butter to a skillet over medium heat. Add sliced onions and saute for 5 minutes, then season with kosher salt. Add a teaspoon of brown sugar and a cup of water allow the onions to cook down until the water completely evaporates, about 20 minutes. Stir occasionally.
Add chopped prosciutto to the caramelized onions and continue to cook for 5 minutes. Set aside to cool.
Roll out a sheet of puff pastry on a lightly floured surface and place brie in the middle of the puff pastry sheet. Make a crosshatch pattern on top of the brie. Do not remove the top of the brie (the rind).
Spread apricot preserves on top of the brie. Then place the caramelized onions and prosciutto, and chopped rosemary on top.
Fold edges of puff pastry over the brie. Trim off any excess dough if needed.
In a small bowl, beat an egg and 1 tbsp of water to make the egg wash. Brush the puff pastry with the egg wash. Bake for 20-25 minutes, until golden brown.
Allow it to cool for 5-10 minutes prior to cutting into the pastry.
Baked Brie Variations
For the perfect holiday appetizer, add fresh cranberries or apple slices on top of the cheese for a festive treat.
Savory baked brie - add sauteed mushrooms and onions on top of the wheel of brie and omit sweet ingredients for a savory dish.
Go nuts! Add chopped or candied nuts to give the creamy texture of the brie a nice crunch.
Make it jammy! Top the brie with your favorite jams or preserves to sweeten it up a bit.
Use fresh fruit as a dipper instead of crackers - it's a great way to enjoy the sweet and savory flavors of this classic appetizer.

Use a triple cream brie for extra creaminess.
This recipe is best served fresh out of the oven as the cheese will remain gooey for about 30 minutes after baking. Cover with aluminum foil to help it stay warm longer. Keep this in mind when serving!
If the puff pastry becomes too warm, place in the freezer for 20 minutes.

Freezing: I do not recommend freezing this recipe as the texture and flavor of the brie will be changed once thawed.
Make Ahead: prepare the recipe as instructed and wrap the brie in the puff pastry without applying the egg wash. Cover with plastic wrap and place in the refrigerator. Just before baking, brush with the egg wash and bake as listed in the recipe card.

Baked brie in puff pastry is best served fresh out of the oven. To keep it warm as long as possible, you can cover with aluminum foil to help it maintain its temperature. Should you need to reheat it, place back in the oven at 300 degrees F until the cheese becomes gooey again.
Should you cut the rind off brie before baking in puff pastry?
No, there's no need to remove the rind prior to baking. The rind is edible and actually helps the brie keep its shape while baking.
Do you bake brie covered or uncovered?
Bake the brie uncovered so that it gets nice and crisp and flaky.
Should you bring brie to room temperature before baking?
No, I actually recommend baking chilled from the fridge so that it holds its shape while baking in the oven.
