Let’s talk about why this is about to be your new favorite recipe. I had to gush about these Apple Pear Fritters because they’re full of apple and pear chunks, cinnamon, ginger, and nutmeg – but they’re also SO easy to make. It’s one of those recipes to keep in your back pocket when you want to impress a bunch of folks with something that looks complicated but secretly, isn’t.

Key Ingredients

  • Fuji or Honeycrisp Apples: fuji apples are my favorite because they’re the sweetest apples and are easily accessible. They provide a nice crunch and cook down well. However, honeycrisp apples are just as good!
  • Bartlett Pears: these pears are super juicy and perfect for this recipe. Be sure that you use them when they are on the firmer side so that it won’t compromise the integrity of the fritter by making them too watery. They also provide exceptional flavor!
  • Buttermilk: to make these fritters super fluffy on the inside. Buttermilk reacts with baking powder to produce a light texture in the fritter.
  • Vanilla Extract, Brown Sugar, Cinnamon, Nutmeg, and Ginger: to give these apple pear fritters that sweet, warm and bold flavor that we all love!
  • Eggs, Butter, Flour: to provide the structure of the fritter and hold all of this delicious together!

Are apple fritters donuts?

No, not exactly. But I could see how one could easily call this a donut. While they are very closely related, donuts are classically noted as a round fried piece of sweetened dough.

Fritters and donuts can be both batter based, however, fritters, like these apple pear fritters, are technically deep-fried (or in this case – pan-fried) cakes.

Tips for making apple pear fritters!

  • One thing that helped me substantially is using a candy thermometer to gauge the temperature of the oil when frying these apple pear fritters. Controlling the oil temperature makes for a more consistent fritter. Do you need a candy thermometer? Absolutely not! But it really does help.
  • Don’t worry about chopping the apples and pears perfectly! So long as they’re chopped into small cubes, they don’t need to be uniform. I personally think that this gives the apple pear fritters a really unique and homemade look when they’re different sizes!
  • Use an ice cream scooper when scooping the batter into the frying pan. It helps to ensure that all fritters are the same size. It also makes for an easier clean up too!

Apple Pear Fritters with Honey Glaze

Ingredients 

Apple Pear Fritters

  • 2 Fuji Apples
  • 2 Bartlett Pears
  • 1 cup Buttermilk
  • 2 tsp Vanilla Extract
  • 2 eggs
  • 3/4 cup Brown Sugar
  • 1 Lemon, Zest
  • 4 tbsps Salted Butter, melted
  • 2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1 tsp Kosher Salt
  • 1 tbsp Cinnamon
  • 1 tsp Ground Ginger
  • 1/2 tsp Nutmeg
  • Neutral oil (such as canola or grapeseed oil)

Honey Glaze

  • 1/2 cup Honey
  • 4 tbsps Butter, melted
  • Pinch of Salt
  • 1 cup Powdered Sugar
  • 3 tbsps Milk
  • 1/2 tsp Cinnamon

Instructions 

  • Chop apples and pears into cubes and set aside. (if using canned pears, see notes section) In a large bowl, combine buttermilk, vanilla extract, eggs, brown sugar, lemon zest, and melted butter. Whisk together until smooth.
  • In a separate bowl, combine flour, baking powder, salt, cinnamon, ground ginger, and nutmeg. Mix together and add to the wet ingredients. Also add in the chopped apples and pears. Fold together until dry ingredients are fully incorporated.
  • In a skillet, add about 2 inches of neutral oil and heat on medium low to medium. Once oil is hot (preferably reaching 350-360 degrees F if using a candy thermometer), spoon 2 heaping tablespoons of batter into skillet. Cook until golden brown on both sides, about 3-4 minutes per side.
  • Once cooked, remove from oil and set aside on a cooling rack or a paper towel to allow oil to drain.
  • Make the honey glaze: add honey, butter, powdered sugar, milk, cinnamon, and a pinch of salt to a small sauce pan over medium low heat. Whisk together until a glaze forms and remove from heat (about 4-5 minutes).
  • Brush apple pear fritters with honey glaze on a cooling rack.

  • If using canned pears, use 3 15 oz cans of sliced pears. Be sure to drain the syrup!
