We all know that 2020 has been the year of banana bread! It wouldn't be fair if I didn't at least contribute to the craze. Although it's taken some time, I finally perfected this recipe and it's SO good! There are SO many types of banana breads, I just wanted to keep it simple. This banana bread is SUPER tender, perfectly spiced with cinnamon and nutmeg, and so tasty. The crumb is very moist and only gets better with time! In addition, it's really simple to make and takes about an hour to bake and then you're done!
The best types of bananas to use for this recipe are the ones that are super ripe and soft. Don't throw them away! They make the perfect banana bread because they're full of sugar and moisture. This ensures that the banana bread is super moist, tender, and full of that beautiful banana flavors that we all love!

So when I tell you that this recipe is super easy, I mean it! You simply mash up the bananas and then add the remainder of the wet ingredients to the bananas and mix well. Then in a separate bowl, you whisk together you dry ingredients. Add the dry ingredients to the wet ingredients, add to a loaf pan and bake! So simple! I baked this for an hour. However, as we all know, everyone's oven is different so be sure to poke the bread with a toothpick prior to removing from the oven.
Because this bread is so tender, it holds a lot of moisture. So, it's important to ensure that this is fully baked prior to removing from the oven, or else it'll fall apart. It's also key that you allow this to cool before cutting! I promise, it's SO worth the wait. All of this buttery, spiced, banana goodness will wow your tastebuds! Also, major key - this bread makes an AMAZING french toast. We cut this up and make the most delicious banana french toast I've ever had. Thank me later! lol

What is it about 2020 that made this bread so popular? I think that the pandemic has a lot to do with it. Think about it - how many times have you purchased bananas and had those last two of the bunch that became overripe? A LOT! Well, at least for me. lol When I eat bananas, I like them to be JUST turning yellow. I don't like them when they're too sweet. That's why I love making this recipe because it allows me to use the bananas that I would never eat otherwise.
Anyway, I think that banana bread became so popular for this reason - no one wanted to waste food in 2020. When the supermarkets were bare in certain places and food became a bit scarce and the future was unpredictable, I think that a mental shift occurred. The things that we took for granted became things that we appreciated the most. Things like seeing flour yeast for the first time in weeks after a long shortage was awesome! But also the more important things like signing into work after so many people had been laid off or a hug from your loved ones.. the things we take for granted easily became the most valuable.

The texture. The presentation. And most importantly?! The taste! This banana bread is SO incredibly tender and moist it's insane. I made a maple butter to go with this and it was amazing. But this bread is spiced with a little nutmeg and cinnamon.. and it has a little vanilla extract to bring out those warm flavors. Also! The mashed ripe bananas truly ensure that this bread gives you all of the banana flavors that you adore about banana bread.
