Cheesy Cauliflower Bites with Sriracha Mayo! These fluffy little cauliflower bites are so delicious. They're garlicky, fluffy, and full of flavor! Also, with the sriracha mayo, it adds a really nice kick! This recipe is super simple, quick, and is perfect for movie night or parties!

I truly believe that the chives, cheese, and garlic are what makes the bites so good. The chives and garlic add beautiful aromatics and the cheese comes in and makes it even that much better!

For the Sriracha mayo, I used a Japanese mayo called Kewpie. Have you ever heard of Kewpie? It's rich and creamy in flavor and has a bit of umami flavor that really makes it so delicious. I prefer Kewpie over traditional mayo because it has a lot more character.

Now that it's officially Friday eve, I've decided that I will definitely be having these with my favorite drink, Minty Mango Bourbon Slush. I just love finger foods, especially when they're easy to make and don't require too many intricate steps.

So many people have told me that lately, they've been enjoying quick recipes. So, here we are, coming through and delivering something quick and delicious! Plus, if it has cauliflower, it's healthy right? lol They're still deep fried, but oddly enough, there's no butter in this recipe. This actually may be one of the few recipes on my blog that doesn't include butter.... but they're so good, they don't need butter!

Equipment

  • Food Processor
  • Mixing Bowls
  • Dutch Oven or Large Pot

Ingredients

  • 1.5 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1 cup Sharp Cheddar Cheese (shredded)
  • 1 Head Cauliflower
  • 2 Eggs
  • ½ cup Milk
  • 3 cloves Garlic (diced)
  • 2 tbsps Fresh Chives (chopped)
  • 1 tsp red pepper flakes (optional)
  • ¼ cup Mayonnaise

Sriracha Mayo

  • 3 tbsps Sriracha
  • 1 tbsp Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Pepper, to taste

Directions

  • Preheat oil in a large pan or deep fryer to 340-360 degrees F. Pulse cauliflower in a food processor until riced.
  • Combine flour, baking powder, cheese, riced cauliflower, red pepper flakes, chives, diced garlic, and salt and pepper, to taste. In a seperate bowl, mix together 2 eggs and milk. Pour into cauliflower mixture and mix together until fully combined.
  • Add a heaping tablespoon to the oil and fry until golden brown, about 4 minutes each side. Remove from oil and allow to cool on a drying rack or paper towel.
  • Mix together kewpie/mayo, sriracha, lemon juice, garlic powder, and onion powder for sriracha mayo.
  • Eat!
