Brown Butter Jalapeno and Bacon Cornbread is your new favorite cornbread recipe! Sweet, savory, and a tiny bit spicy with tons of flavor!

Finally! A corn bread recipe that's easy and absolutely delicious! I cannot tell you how many times I've had corn bread that's been dry and bland - but I can promise, this is not one of them! With every bite, you can expect bacon bits and jalapenos and corn that are sauteed in brown butter before baking. There's a lovely balance between sweet and savory with this dish. The sweetness of the cornbread coupled with the smoky and spicy flavors of bacon and jalapeno make this recipe such a fun treat in the summer. So far, I've eaten it alone as a quick snack and we've also paired this cornbread with a roast beef with stewed veggies - both were delicious! The way that the corn bread soaks up the gravy and adds to the dish is such an explosion of flavor. However you decide to eat this recipe, make sure you drizzle it with butter and honey on top - I promise you won't regret it!

I cannot begin to exclaim how happy I am that today is Friday! Has anyone been having super busy weeks and just feeling overwhelmed by everything? This recipe was definitely a fun way to hop in my kitchen and turn off all of the outside noise and really enjoy being in my own element - the kitchen. Currently, my kitchen is stocked with so many delicious finds from Balducci's Food Lovers Market. I love shopping at Balducci's because they always have such a beautiful selection of foods. I often find food items there that I'm unable to find anywhere else so I it's always such a treat when I shop there. With this recipe requiring so many fresh ingredients, I knew that Balducci's was the only place that would be able to provide quality items that would truly help bring out all of the flavors of this dish.

Browned Butter Bacon and Jalapeno Cornbread

Ingredients

  • 10 pieces of bacon
  • 3 ears corn
  • 1.5 jalapenos, diced finely
  • 1.5 sticks butter
  • 1.5 tbsp fresh sage leaves, chopped
  • ¼ cup honey
  • 1.5 cups corn meal
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ¾ cup sour cream
  • 1 egg
  • 2 egg yolks

Directions

  • Preheat oven to 400 degrees F. Cook bacon in a cast iron skillet for 12-15 minutes then reduce heat to 350 degrees F.
  • Slice corn off of ears of corn and dice jalapenos. When bacon is finished, remove bacon from skillet and allow to cool on drying rack/paper towels. Add 1 stick of butter and fresh sage leaves to the skillet and allow it to brown over medium heat. Add corn, jalapenos, and honey to skillet and brown. Allow to cool.
  • Add corn meal, flour, sugar, baking powder, baking soda, and salt to a stand mixer with the whisk attachment. Whisk until all ingredients are combined. Add corn and jalapeno mixture, remaining half stick of butter, sour cream, and 1 egg and 2 egg yolks. Mix for about 30 seconds.
  • Spray a 9-inch circular baking pan with oil and add batter. Bake at 350 degrees F for 40-45 minutes, until a toothpick comes out clean.
  • Drizzle with honey and butter! Eat up!
