Peanut butter cup blondies but make it with brown butter! These blondies have a chewy center with crisp edges and Reese’s peanut butter cups in every bite. The addition of brown butter make them even better!
I love salted caramel peanut butter cups so I figured, why not add them to blondies? You’ve got the chocolate peanut butter cups and the buttery richness of blondies – it’s a match made in heaven.

It’s the fifth day of BrowniePalooza and I had to break up all of the chocolate recipes with a blondie recipe. This is not to say that chocolate it bad by any means, but I figured it’s be a nice change from all of the brownie recipes. And what better way to add some zing than with these Peanut Butter Cup Blondies?
Anywho, these blondies are incredible. They’ve got crisp edges, a chewy center, and there’s peanut butter cups in every bite. Those chunks of peanut butter and chocolate with the brown butter is just incredible. Don’t walk, run and make these blondies!

This recipe is super easy and less than 10 ingredients! There’s also only 3 simple steps to this recipe which I know you’ll love!
- Brown the butter then add brown sugar and whisk together. Continue to add vanilla extract and eggs.
- Fold in dry ingredients – flour, baking powder, and salt. Then add in the peanut butter cups. (I used individual peanut butter cups. I cut up half and kept the other half whole)
- Press additional peanut butter cups on top of the batter and bake in a 9×13 baking pan and bake for 25-28 minutes.

baking tips
- Freeze the peanut butter cups prior to baking the blondies. (I used Reeses Peanut Butter Cups – they’re the best in my opinion)
- I say this with almost all of my brownie recipes, it’s better to under bake than over bake! Be mindful of baking times.
- If you do not have peanut butter cups, a simple substitution would be to reduce the flour by a 1/2 cup and add a 1/2 cup of peanut butter and 2 cups of chocolate chips. It’ll be just as delicious!
- Allow the blondies to cool for about 15-20 minutes prior to cutting into them. This ensures that they’re fully set.

Brown Butter Peanut Butter Cup Blondies

Ingredients
- 1 cup brown butter
- 1 1/2 cups brown sugar
- 1 tbsp vanilla extract
- 2 eggs
- 2 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 2 cups peanut butter cups
Instructions
- Freeze peanut butter cups for at least 30 minutes.
- Preheat oven to 350 degrees. Brown butter in a pan and add to a large mixing bowl. Add brown sugar and whisk together for 2-3 minutes and allow it to cool slightly. Whisk in vanilla extract and eggs, one at a time, constantly whisking to prevent the eggs from cooking.
- Fold in flour, baking powder, and kosher salt until just combined.
- Roughly chop peanut butter cups and fold half into the batter. Spray a 9×13 baking pan with nonstick baking spray or line with parchment paper. Add batter to the pan and top with remaining peanut butter cups.
- Bake for 25-27 minutes, until batter is no longer jiggly.

I love love loved this recipe. I was the queen of the belle when I brought this to my “Girls Night Out” event! The brownies were eaten before the main meal…. SMH
