Peanut butter cup blondies with brown butter! These blondies have a chewy center with crisp edges and reeses peanut butter cups in every bite. The addition of brown butter make them even better!
Ingredients
1cupbrown butter
1 1/2cupsbrown sugar
1tbspvanilla extract
2eggs
2 1/4cupall purpose flour
1/2tspbaking powder
1/2tspkosher salt
2cupspeanut butter cups
Instructions
Freeze peanut butter cups for at least 30 minutes.
Preheat oven to 350 degrees. Brown butter in a pan and add to a large mixing bowl. Add brown sugar and whisk together for 2-3 minutes and allow it to cool slightly. Whisk in vanilla extract and eggs, one at a time, constantly whisking to prevent the eggs from cooking.
Fold in flour, baking powder, and kosher salt until just combined.
Roughly chop peanut butter cups and fold half into the batter. Spray a 9x13 baking pan with nonstick baking spray or line with parchment paper. Add batter to the pan and top with remaining peanut butter cups.
Bake for 25-27 minutes, until batter is no longer jiggly.
