This savory sweet potato casserole combines the natural sweetness of sweet potatoes with caramelized shallots, fresh herbs, and a delicate drizzle of honey for a balanced flavor. Finished with a golden, crispy Parmesan bread crumb topping, it’s the perfect side dish for any table!

This savory casserole takes your traditional sweet potato casserole and adds a bold, flavorful, and decadent touch. Creamy sweet potatoes are boiled and mashed, then layered with caramelized shallots and fresh herbs like thyme and rosemary, bringing depth and earthiness to every bite.

Then we add a little bit of honey for the lightest hint of sweetness that simply balances out all of those savory flavors. Topping it all off is a crispy, buttery topping that’s a blend of crispy bacon, toasted pecans, and golden breadcrumbs, giving each bite a nice crunch.

 The smoky, salty bacon pairs beautifully with the nutty pecans and buttery crumbs, creating a textural contrast that complements the creamy sweet potatoes.

I will 100% be making this dish for my Christmas dinner, but it’s also excellent for thanksgiving dinner, sunday dinner, dinner parties etc. It’s a show stopping side dish that will have everyone reaching for seconds.

Key Ingredients

Sweet Potatoes – opt for orange-fleshed varieties like Covington or Beauregard sweet potatoes. They have a natural sweetness and creamy texture when cooked. They also break down easily, making them ideal for casseroles.

Shallots – shallots are the sweetest “onion” in the allium family. It pairs well with the natural sweetness of the sweet potato. If you don’t have shallots, you can use a sweet onion and yellow onion instead.

Fresh Herbs – rosemary and thyme add a pop of earthy flavor!

Seasonings – smoked paprika, dried sage, garlic powder, and nutmeg come together to flavor the sweet potatoes and accentuate the natural sweetness of sweet potatoes! 

Milk – to keep it light, I use 1% Lactaid milk to keep this meal low on dairy! Lactaid’s 1% milk is nice and creamy so you get all of the decadent texture without the lactose – prime!

Large Egg – ​this is just to bind everything together and add a little creaminess. 

Honey – we’re using just a touch of honey to give the casserole that perfect balance out all of the savory flavors. You can also use maple syrup or brown sugar in its place.

For the Bacon Pecan Breadcrumb Topping

Pecans – I like to fold the pecans into the sweet potato mixture as well as use it in the breadcrumb topping. They not only add a nice crunch, but the nutty flavor goes so well with the sweet potatoes! 

Breadcrumbs – I used seasoned bread crumbs here, however, you can use day old bread and toast it and grind it until fine in a food processor. 

Bacon – the bacon grease flavors the topping and toast the breadcrumbs prior to adding it on top of the sweet potato casserole.

Parmesan Cheese – to add a nutty cheesy flavor to the dish. Use freshly grated parmesan for the best results. 

Substitutions

Milk Substitute – for a more decadent texture, you can use whole milk, heavy cream or even add cream cheese or sour cream. For a dairy free option, I recommend using unsweetened coconut milk. 

Vegetarian option – omit the bacon from the breadcrumbs! 

Nut-free – omit the pecans if you dont like nuts or have a nut allergy. 


How to make Savory Sweet Potato Casserole

Step 1: Make the sweet potato filling. Bring a large pot of water to a boil. Peel the sweet potatoes and cut into chunks. Boil the sweet potatoes until fork tender, about 15-20 minutes. Strain and mash with a potato masher until smooth. Set aside.

Step 2: Preheat the oven to 400 degrees F. Rub a casserole dish with 2-3 tablespoons of butter. Add olive oil to a skillet over medium heat. Once the butter is melted, saute shallots for 2-3 minutes. Add garlic, rosemary, thyme, smoked paprika, dried sage, garlic powder, and nutmeg. Cook for an additional 2-3 minutes. Add kosher salt and black pepper.

Step 3: Add butter, milk, and honey. Stir until the butter is melted, then add the mashed sweet potatoes. Cool for 5 minutes, then add eggs and fold in pecans and add to a 10-inch round baking dish.

Step 4: Now make the bacon breadcrumb topping. Cut bacon into small pieces. Add to a skillet over medium low heat. Cook until the bacon becomes crispy, about 20-25 minutes. Add butter. Once melted, add chopped pecans and breadcrumbs and toss together. Continue to cook for an additional 5 minutes, until breadcrumbs are toasted and golden brown. Sprinkle the breadcrumb mixture on top of the mashed sweet potatoes. Bake for 15-20 minutes, until the topping is crispy.

Pro Tips 

Fresh Herbs Are Key: Herbs like thyme, sage, rosemary, and parsley bring out earthy notes and complement the sweetness of the potatoes.

Go Easy on Sweeteners: Since sweet potatoes are naturally sweet, use honey, maple syrup, or other sweeteners sparingly to keep the dish balanced. If you’re one of those people who cooks by feeling and doesn’t measure, go really light on the sweets!

Make It Ahead: Assemble the casserole in advance, but wait to add the topping until right before baking to keep it crisp. It’s a great thanksgiving side dish because I can prep it up to 2 days in advance.

Ingredients 

  • 4 lbs Sweet Potatoes
  • 2 tbsp Olive Oil
  • 3 Shallots, (diced)
  • 3 cloves Garlic, (diced)
  • 1 tbsp Fresh Rosemary, (diced, stems removed)
  • 1 tbsp Fresh Thyme, (stems removed)
  • 1 1/2 tsp Smoked Paprika
  • 1 tsp Dried Sage
  • 1 tsp Garlic Powder
  • 1/4 tsp Nutmeg
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Salted Butter
  • 1 1/4 cup Milk
  • 2 large Eggs
  • 1 tbsp Honey
  • 1/2 cup Pecans, (chopped)

Bacon Pecan Topping

  • 6 slices Bacon
  • 1 1/2 cups Breadcrumbs
  • 4 tbsp Salted Butter
  • 3/4 cup Pecans, (chopped)
  • Fresh Parsley, (chopped)
  • Parmesan, (fresh grated)

Instructions

  • Sprinkle on top of the mashed sweet potatoes. Bake for 20-25 minutes, until the topping is crispy. Top with fresh parsley and grated parmesan.
