Roast Beef Slider Ingredients

  • Deli Roast beef OR Leftover Roast Beef: Sliced roast beef from the grocery store is a great option for convenience, but using your own roast beef works the best. You can also use leftover prime rib from my prime rib recipe!
  • Yellow Onion: Caramelized for a touch of sweetness and depth that pairs perfectly with the beef.
  • Worcestershire sauce: A must-have for adding bold, umami-packed flavor to the beef. I also use this in my reuben sliders for a little extra flavor.
  • Onion powder & garlic powder: Simple spices that enhance the savory notes of the roast beef without overpowering it.
  • Butter, garlic, parsley: These create a buttery topping that soaks into the rolls and makes them golden brown and irresistible.
  • Mayo, Dijon mustard, creamy horseradish sauce: A creamy, tangy trio that adds richness and a little heat to balance the sweet rolls and savory beef.
  • Mozzarella and Smoked Gouda: The perfect combination of creamy and smoky, melting beautifully into the layers of roast beef. You can also use cheddar cheese or provolone if you prefer.
  • Sweet Hawaiian rolls: Soft, fluffy, and slightly sweet, these rolls hold everything together while adding their own distinct flavor. If you want to go the homemade route, use my brioche dinner rolls or homemade hawaiian rolls for the bread! 

Substitutions and Variations 

Add sesame seeds or poppy seeds on top! After brushed the top buns with the garlic butter, sprinkle a generous amount! 

Switch up the cheese: you can use slices of provolone cheese, pepper jack cheese, or even cheddar cheese.

Make ahead: ​this easy recipe is perfect for busy weeknights. You can even prep ahead by making the filling ahead of time and assembling when you’re ready to heat everything in the oven! 

How to Make Roast Beef Sliders

Step 1: Prep the Rolls: Preheat your oven to 350°F. Line a baking sheet with parchment paper. Slice the Hawaiian rolls in half using a serrated knife and place the bottom half on a parchment-lined baking sheet. Bake for 5-8 minutes until golden brown.

Step 2: Cook the Filling: Heat a drizzle of olive oil in a skillet over medium heat. Add the roast beef, Worcestershire sauce, onion powder, and garlic powder. Cook for 2-3 minutes and set aside. Add more oil if needed, then cook diced onions until softened. Stir in butter and garlic, cooking until caramelized. Toss in parsley and remove from heat.

Step 3: Assemble the Sliders: Mix mayo, Dijon mustard, and horseradish together in a small bowl and spread on the top and bottom half of the rolls.

Step 4: Layer mozzarella and smoked Gouda slices.

Step 5: Place the seasoned roast beef, caramelized onions, and crispy French onions on top of the rolls. Place the top half of the rolls over the filling.

Step 6: Pour the remaining butter mixture over the tops of the rolls. Bake at 425°F for 10-15 minutes, or until the cheese is melted and the rolls are golden brown.

Ingredients 

  • 1 lb Roast Beef
  • 1 tbsp Worcestershire Sauce
  • 1 Yellow Onion, (diced)
  • 1 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 3 tbsp Mayonnaise
  • 1 tbsp Dijon Mustard
  • 3 tbsp Creamy Horseradish Sauce
  • 6 slices Mozzarella Slices
  • 6 Smoked Gouda Slices
  • Crispy French Onions, (optional, for garnish)

Garlic Butter Topping

  • 8 tbsp Salted Butter
  • 3 cloves Garlic, (diced)
  • 3 tbsp Fresh Parsley, (diced)

Instructions 

  • Preheat the oven to 350 degrees F. Cut the hawaiian rolls in half and place onto a parchment lined baking sheet. Bake for 5-8 minutes, until golden brown.
  • Remove from the oven and increase the oven temperature to 425 degrees F.
  • In a large skillet, add a drizzle of olive oil over medium heat. Add sliced roast beef and worcestershire sauce. Season with onion powder and garlic powder and cook for 2-3 minutes. Remove from the pan, leaving the juices behind. Set aside.
  • Drizzle additional oil if needed, then add onions and cook for 5 minutes, until softened. Add butter and garlic and continue to cook for 3-4 minutes, until the onions and garlic have softened and caramelized slightly. Remove from heat and add parsley.
  • Combine mayo, dijon mustard, and horseradish sauce in a bowl. Slather on top of the hawaiian rolls, then place mozzarella and smoked gouda cheese slices on top of the bread. (I like to alternate the slices (see the photos).
  • Place the roast beef on top of the cheese, then spoon out the onions from the garlic butter sauce. Place the onions on top of the roast beef and place the other half of the bread on top.
  • Pour the remaining garlic butter sauce on top of the rolls. Bake for 10-15 minutes, until the rolls are golden brown and the cheese is fully melted.
  • Top with crispy french onions.
