Are smashed potatoes the new potato chips?! They’re crispy, crunchy, and soft in the middle with tons of flavor. Then there’s a whipped herb ricotta blended with feta cheese for a delicious dip – it’s just so addicting. Sign me up for these crispy savory bites anytime!

We’ve all had mashed potatoes, home fries, french fries, roasted potatoes, and I even heard that Potato Milk is on the rise. I mean, what can’t you do to a potato?! But smashed potatoes are making it’s way to the top as one of the most delicious ways to prepare a potato. (don’t believe me, check TikTok!)
This crispy smashed potatoes recipe is crunchy on the outside with a nice layer of seasoning and the toppings are endless. I actually made a whipped ricotta dip with fresh herbs and feta and a little olive oil and lemon juice – so delicious.

How to Make Smashed Potatoes
- Boil potatoes in a baking soda/salt water mixture until they are fork tender but not mushy, about 20-25 minutes. Drain the potatoes and add to a baking sheet.
- There are multiple ways to smash the potatoes, however, I like using the bottom of a glass cup. You can also use another baking sheet and smash all of the potatoes at once. Literally press each potato and smash it.
- Add seasonings and olive oil the potatoes and roast in the oven at 450 degrees F for 20-25 minutes, then flip the potatoes and roast for an additional 10 minutes.

So literally all you have to do is boil the potatoes, smash them, then roast them. It’s really only three steps! If you want to take it a step further, make that whipped ricotta dip that pairs SO well with this recipe. Just add ricotta, lemon juice, olive oil, feta, and fresh herbs to a blender and blender until combined.
Pair that with these crispy smashed potatoes and you’ve got one heck of a dish!

Tips for making Smashed Potatoes
Here’s a few pointers for making the BEST smashed potatoes:
- Use smaller potatoes such as red potatoes to make smashed red potatoes or creamer potatoes. I like a mix of both honestly. You can also use baby golden potatoes too!
- Add a little baking soda to the water when boiling the potatoes, this makes the potatoes extra crispy!
- Boil the potatoes until the are soft enough to smash. You don’t want them to be too soft.
- You can make these pretty easily in an air fryer too!

What to Serve with Smashed Potatoes
These are seriously so good by themselves but if you want to add more deliciousness to the mix, I’ve got a couple recommendations to satisfy the craving!
Enjoy with soup, especially this creamy tomato soup or pair with this hearty chili. These crispy potatoes make for amazing dippers in soup so that’s pretty high on my recommendation list! You can also serve these crushed potatoes with my favorite – roasted garlic labneh for another creamy dip that’s full of garlic and creamy goodness!

Crispy Smashed Potatoes with Whipped Herb Ricotta

Equipment
- Calphalon Performance Cool Touch Air Fry Oven optional
- Calphalon ActiveSense Blender optional
Ingredients
- 3 lbs creamer potatoes
- 1/2 tsp baking soda
- 1 tbsp onion powder
- 2 tsp parsley, fresh, chopped
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp thyme
- 1/2 tsp rosemary
- Olive oil
- salt and pepper, as desired
Whipped Herb Ricotta
- 1 cup ricotta cheese
- 1/4 cup sour cream
- 1/4 cup feta
- 3 tbsps olive oil
- 2 tbsps lemon juice
- 3 tbsps garlic cloves
- 2 tbsps dill, freshly chopped
- 1 tbsp parlsey, freshly chopped
- 1 tbsp chives, freshly chopped
- salt
Instructions
- Preheat the oven to 450 degrees F.
- Bring a large pot of water to a boil, about 8 cups of water. Add baking soda and pinch of salt. Add potatoes and boil for 20-25 minutes, until fork tender but not mushy.
- Drain potatoes and place on a baking sheet. Smash each potato with the bottom of a cup or place a baking sheet on top of all of the potatoes to smash them all at once.
- Combine seasonings in a small bowl and sprinkle on top of the potatoes and drizzle olive oil on top. Roast in the oven or air fryer for 20-25 minutes, until golden with crisp edges. Then remove baking sheet from the oven and flip the potatoes over and roast in the oven for an additional 10 minutes.
- In a blender, add ricotta, sour cream, feta, olive oil, lemon juice, garlic cloves, dill, parsley, chives, and salt. Blend together until all ingredients incorporated.
- Serve smashed potatoes with whipped herb ricotta.
Notes
- Use a variety of small potatoes including red potatoes, baby golden potatoes, and creamer potatoes.
