It’s a mouthwatering mix of shredded chicken, pickled jalapenos, fresh parsley, lots of hot sauce, blue cheese dressing and crumbles, plus cheddar cheese, all baked together in a skillet until perfectly melty. And the best part? It comes together in under 30 minutes, making it the perfect party appetizer.

The first time I made this dip, it was so good I almost didn’t get a chance to serve it. My family and I were scooping it up with some tortilla chips and celery sticks, and before I knew it, half the dip was gone!

I keep this recipe on repeat all football season long and figured with the big game day coming up on Sunday, it’s the perfect time to share this easy buffalo chicken dip recipe! 

So what sets this creamy dip apart from all of the oher buffalo chicken wing dip recipes?

  • It’s easy to make and calls for simple ingredients! I use rotisserie chicken to avoid the need to cook anything prior, I also use pickled jalapenos to play up that tangy blue cheese flavor.
  • In addition, my secret ingredient that REALLY packs up the flavor – old bay. Yes, I know that I live in Maryland and we put Old Bay on everything (just check out my old bay shrimp boil) – it adds SO much flavor to this cheesy dip.

  • Store-bought Rotisserie chicken – This is an easy time-saver that doesn’t compromise on flavor. I like to use this because I don’t have to make the chicken ahead of time. It’s already cooked, so all you need to do is shred it up, and you’re ready to go.
  • Garlic powder, Onion Powder, and Old Bay Seasoning – to pack this dip with the best flavor, making this an irresistible buffalo chicken dip! 
  • Cream cheese – It gives a smooth and indulgent texture to the dip. I highly recommend using room temperature cream cheese for a nice, smooth consistency. Use ant leftovers to make my street corn dip!
  • Frank’s Hot sauce – The essence of buffalo flavor! I prefer spicy ones, but you can always adjust the amount of hot sauce depending on your tolerance. If you are like me who loves a little heat, I recommend going for the full cup.
  • Blue Cheese Dressing and Blue Cheese Crumbles – These tie everything together and give the dip its signature flavor. If you are not a fan of blue cheese, you can always swap it for ranch, but trust me, blue cheese is the way to go!
  • Sharp Cheddar Cheese – It adds just that cheesy flavor and melty cheesy texture without overpowering the buffalo flavor. Plus who doesn’t want an extra layer of melty goodness? For less intense cheesy flavor, use mild cheddar cheese. 
  • Pickled jalapeños – I love a bit of extra zing, and this adds the perfect touch of tang and spice. Totally optional, but they’re worth it!
  • Fresh Parsley – The finishing touch. A sprinkle of chives or parsley for a pop of color that brightens the whole dip. You can also use chopped green onions instead.

Variations and Substitutions

  • Crockpot Buffalo Chicken Dip: Prefer a hands-off approach? Make this buffalo chicken dip in a slow cooker by adding all the ingredients to your crockpot, setting it to low for 2-3 hours, stirring occasionally.
  • Canned Chicken: Rotisserie chicken is the easiest option, but if you’re short on time, canned chicken is a convenient substitute that works just fine. Be sure to drain and shred it before mixing into the dip.
  • Light Cream Cheese or Greek Yogurt: Want a lighter dip? Swap out the cream cheese with plain Greek yogurt or light cream cheese. The texture will be slightly looser but the flavor will still be there! 
  • Ranch Dressing: ​use a creamy ranch dressing in place of blue cheese dressing if you prefer! 
  • Adjust the spice level: ​add in some red pepper flavors or cayenne pepper to make this buffalo dip recipe even spicier! For milder flavor, omit the jalapenos. 

How to Make Buffalo Chicken Dip

Step 1: Preheat the oven to 400 degrees F. Combine softened cream cheese, garlic powder, onion powder, old bay, blue cheese dressing, and hot sauce in a large mixing bowl. Use a hand mixer to mix everything together for about 30 seconds, until combined.

Step 2: Then use a rubber spatula to fold in the cubed chicken, cheddar cheese, pickled jalapeños, blue cheese crumbles, parsley, and a pinch of salt.

Step 3: Add to a 10-inch round cast iron skillet and sprinkle additional cheese on top. Bake for 15-20 minutes, until the cheese is melted and bubbly.

Balance the Heat: Adjust the hot sauce to your taste, but don’t skimp on it—it’s the heart of the dip. If you prefer a milder version, try using half hot sauce and half a milder sauce or yogurt.

Let It Rest: After baking, give the dip a few minutes to settle. This helps the flavors meld together and makes it easier to scoop.

  • 16 oz Cream Cheese, (room temperature)
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Old Bay
  • 1/2 cup Blue Cheese Dressing

  • 4 cups Rotisserie Chicken, (cut into chunks)
  • 2 cups Cheddar Cheese, (shredded, additional for topping)

  • 1/4 cup Parsley, (diced)

    I’ve been making a version of this dip for years. I used this recipe for the first time and let me say that the Old Bay slays! Thank you!! I love Old Bay and never thought to add it. This recipe will be my new go-to. Someone please invite me to something so I don’t eat the whole thing 🙂
