The buttery cinnamon streusel chunks mixed in with some fresh blueberry preserves is what makes these bars a winner.

Firstly, this is a no bake recipe. You know what that means right? No oven, minimal work, and super easy! To make these Blueberry Cobbler Ice Cream Bars, start by making the streusel. The streusel is nothing more than flour, sugar, tiny bit of salt, cinnamon, and melted butter. Simply mix all of these ingredients together and add to the freezer.
Then continue by whipping heavy whipping cream in a bowl until stiff peaks form. Then fold in the sweetened condensed milk - or what I like to call the magic ingredient. The sweetened condensed milk is what adds the richness and sweetness to this recipe. Also add in some vanilla extract and fold that in too. Then the fun begins. Add blueberry preserves and the streusel into the mix and fold together until slightly incorporated, just enough to create a swirl. Then stop.
After that, spoon the ice cream into a silicone popsicle mold. Then freeze for a minimum of 6 hours. And you're done. If you wanna be fancy, I drizzled the blueberry cobbler ice cream bars with white chocolate and crushed freeze dried raspberries for a bit of a tart kick, but this is totally optional! The bars taste delicious with and without it.

Absolutely. For these blueberry cobbler ice cream bars, I made my own so I will always encourage you to do the same too! If you're like me and love berries and always have a ton around the house, it's SO easy to make your own blueberry preserves. Simply add 1 cup of blueberries to a saucepan over medium low heat and add 3 tbsps of sugar and juice from one lemon. Let that cook down until nice and syrupy and allow it to cool completely. Allowing it to cool with give it a chance to thicken. Then you're done.
Some add corn starch or arrowroot powder, however, I only use that when I'm baking. No need to use these thickening agents for a recipe that's going into the freezer.

The best way to store these blueberry cobbler ice cream bars is in an airtight container in the freezer. After the initial 6 hours to set in the silicone mold, I recommend keeping them in the freezer until ready to serve. They will melt fairly quickly as there aren't any preservatives of fillers in this recipe.
A for longevity, these bars will last for about a month in the freezer before going freezer burned. Just be sure to store in an airtight container.
