This green bean recipe takes very little effort, transforming a bag of frozen beans into something that tastes gourmet, proving you don’t always need fresh ingredients to make a winning dish.

  • Frozen Whole Green Beans: The star of the show! Frozen beans work wonders because they’re stored at peak ripeness, allowing them to retain a lot of nutrients. You can use french cut or frozen cut green beans, both will do! 
  • Kosher Salt and Black Pepper: The dynamic duo for great flavor. Sea salt also works if that’s what you have.
  • Salted Butter: Adds richness and helps the spices cling to the beans. 
  • Fresh Garlic: A little diced garlic brings a lot of flavor to the dish.
  • Cajun Seasoning: This bold spice blend brings a smoky, savory kick with hints of garlic, paprika, and a touch of heat. It adds depth and subtle spice, elevating the green beans from simple to sensational.
  • Lemon Juice: just a squeeze of lemon juice adds a nice brightness to the veggies and brings all of the flavors together.
  • Sliced Almonds: The garnish you didn’t know you needed! Adds crunch and a subtle nutty flavor. You can also use almond slivers if that is all you can get your hands on.

  • Swap the almonds: If you’re not a fan or are allergic, try parmesan cheese or toasted breadcrumbs for a different texture.

How to Make Roasted Green Beans

Step 1: Preheat your oven to 425°F. While it heats up, line a large baking sheet with parchment paper. Spread your frozen green beans out in a single layer. Drizzle them with extra virgin olive oil and sprinkle with kosher salt and black pepper. Roast on the top rack of the preheated oven for 15-20 minutes, keeping a close eye so they don’t burn. You’re looking for golden brown edges and extra crispy green beans.

Step 2: While they’re roasting, melt butter in a skillet over medium heat. Add the diced garlic, lemon juice, and Cajun seasoning, cooking until fragrant (2-3 minutes). Set aside.

Step 3: Once the beans are done roasting, toss them in the garlic butter mixture.

  • Don’t overcrowd your pan. Use a large baking sheet or split the green beans between two baking sheets if you need more room. Overcrowding the pan prevents the beans from crisping up.
  • Don’t skip the parchment paper. It prevents sticking and makes cleanup a breeze. You can also use aluminum foil, just make sure to spray the foil so that the green beans don’t stick. 
  • Toss in garlic butter immediately. The warmth from the beans will absorb all that buttery goodness.
