Strawberry shortcake crumbles or Strawberry Crunch topping is so easy and fun to make! It's the ideal topping for vanilla ice cream, trifles, cupcakes, cakes, cookies - you name it!

All you need are 4 ingredients - golden oreos, freeze-dried strawberries, melted butter, and strawberry jello powder! In under 5 minutes you'll have the most delicious strawberry crumbles ever!

Strawberry shortcake ice cream bars will always have a special place in my heart! The strawberry crumbs on top of the strawberry ice cream always made the most delicious treat!

Every time the ice cream truck would come around, I would get these bars and the outside of the ice cream bar was my favorite.

So, I made a homemade version that tastes JUST like it. This strawberry shortcake crumble recipe is everything. It's only 4 ingredients and literally goes so well on top of so many dessert recipes.

In fact, I used this crunch on top of my Strawberry Crunch Cake! Best part? No baking involved, just put everything in a blender and go!

Ingredient Notes and Substitutions

Freeze dried strawberries: no need to worry about strawberry season and getting fresh strawberries, the freeze-dried fruit gives so much of that nostalgic strawberry crunch. Save some and make my strawberry butter cake while you're at it!

Strawberry gelatin mix: this is the ingredient that really takes it up a notch and really gives that sweet strawberry flavor! I used Jell-o brand from my local grocery store.

Golden oreo cookies: these are pretty easy to find but I've also used vienna sandwich cookies when I've been unable to find them.

Butter: you can use unsalted butter or salted butter - totally up to your personal preference.

What You'll Need

  • A food processor
  • Ziploc bag for storing any leftovers

If you don't have a food processor, you can use a rolling pin to crush the ingredients in a ziploc bag and then toss in the melted butter to form the strawberry crumbles.

Tips and Substitutions

  • If you prefer a more coarse crumb, pulse in the blender until the desired texture is reached. If you like smaller pieces / small crumbles, blend longer.
  • Add a little pink food coloring for a fun reddish-pink color.
  • Also, if you can't find strawberry jello mix, raspberry jello mix works well too!
  • If you'd like a dairy free/vegan option, use vegan butter instead.

How to make Strawberry Crumbles

  1. Melt butter.
  2. Add vanilla cookie sandwiches, freeze dried strawberries, melted butter, and strawberry jell-o mix to a food processor.
  3. Blend for 10-15 seconds, until desired consistency is reached.

After you've made the crumbles, add them to an airtight container or ziploc bag. Store in the refrigerator for about 3 months. I don't recommend freezing because when it thaws, it may become soggy.
