Have you ever had sour cream and onion chips? Well these sour cream and onion noodles with chicken and brussel sprouts taste just like them! Growing up, I remember eating Herr’s chips and to this day, they are still my favorite.
Mercury is in retrograde. I’m pretty sure that everyone and everything is going insane. My Husband thinks I’m crazy when I tell him to be extra careful during retrograde but let me tell you, it’s REAL! We’re only a few days in and so many strange things have happened.
This isn’t a bad thing particularly, just strange. On several of my work calls, WebEx has been down or there’s been interference so much that the calls have had to be rescheduled. In addition to that, all of my data in Lightroom spontaneously deleted. I had to re-download everything from presets to saved settings etc.
Retrograde in combination with the pandemic and everything else that’s going on – I’m tired.

Today’s dish is brought to you by my favorite childhood snack – sour cream and onion chips. I’ve been thinking about this recipe for quite some time so I’m glad that I finally decided to give it a try. I used to eat them all of the time as a kid and probably more than I should as an adult.
We start with a basic Béchamel sauce and then it takes a life of its own. Garlic, onion powder, sour cream and chives – with noodles and chicken and brussel sprouts. When I tell you the sauce tastes just like the seasoning from the chips, I lie to you not!
This dish takes about 30 minutes to make. I hope that you all are enjoying these quick recipes because I certainly am. They have been saving so much time!

Tips and tricks
- Do not let the Bechamel sauce burn, it’s so important to constantly stir!
- Make sure to save some of the pasta water prior to draining the noodles. It makes a huge difference!
