Step By Step Instructions

Step 1: Brown andouille sausage in a dutch oven or large skillet over medium heat until crispy, then sauté bell pepper, onion, and celery until softened and fragrant.

Ingredients 

  • 12 oz Andouille Sausage, (sliced)
  • 1 Green Bell Pepper, (diced)
  • 1 large Yellow Onion, (diced)
  • 2 Celery Stalks, (diced)
  • 1 lb Ground Beef, (I used 80/20)
  • 1 1/2 tbsp Cajun Seasoning
  • 1 tbsp Tomato Paste
  • 2 tsp Chicken Bouillon Paste
  • 2 tsp Garlic Powder
  • 1 1/2 tsp Onion Powder
  • 1 tsp Oregano
  • 6 Garlic cloves, (diced)
  • 2 cups Long Grain Rice
  • 3 1/2 cups Chicken Broth
  • 2 Bay Leaves
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp Hot Sauce
  • Squeeze Lemon Juice
  • Green Onions, (chopped), for garnish

Instructions 

  • Add a drizzle of olive oil to a large pot or dutch oven over medium heat. Add andouille sausage and cook for 3-4 minutes, until slightly browned and crispy. Then add in diced green bell pepper, onion, and celery. Continue to cook for 5 minutes, until softened and browned. Then add ground beef and cook until no longer pink, about 7-10 minutes. 12 oz Andouille Sausage 1 Green Bell Pepper 1 large Yellow Onion 2 Celery Stalks 1 lb Ground Beef
  • Once the ground beef is cooked through, add cajun seasoning, tomato paste, chicken bouillon paste, garlic powder, onion powder, oregano, and diced garlic. Stir everything together until combined and cook for 5 minutes, stirring frequently to prevent burning. 1 1/2 tbsp Cajun Seasoning 1 tbsp Tomato Paste 2 tsp Chicken Bouillon Paste 2 tsp Garlic Powder 1 1/2 tsp Onion Powder 1 tsp Oregano 6 Garlic cloves
  • Add rice and cook for 3-4 minutes, until it becomes translucent and slightly toasted, then pour in chicken broth, worcestershire sauce, and hot sauce. Use a wooden spoon to scrape any browned bits off of the bottom of the pan (this add a ton of flavor). Stir and bring to a boil, then add bay leaves. Reduce heat to low heat and simmer for 15-20 minutes, until rice is fully cooked. 2 cups Long Grain Rice 3 1/2 cups Chicken Broth 2 tbsp Worcestershire Sauce 2 tbsp Hot Sauce 2 Bay Leaves
  • Once finished, fluffy up the rice with a fork or spatula and add a squeeze of lemon juice on top. Garnish with chopped green onions. Squeeze Lemon Juice Green Onions
