I've been keeping this recipe in my back pocket for a rainy day. It's a classic southern style macaroni and cheese recipe that's been in my family for years. Well, today it's snowing and I'm ready for it to make its debut. This creamy baked macaroni and cheese is ridiculously good.

I made this recipe for Thanksgiving last year and then again (by popular demand) for Christmas... and then all the time randomly whenever my family comes to visit!

It's creamy, has five cheeses, is perfectly seasoned, and is SO simple to make. It's the ULTIMATE comfort food!

how do you make baked mac and cheese?

Ok, this goes fast so listen up! Just kidding, it's super simple to make this baked macaroni and cheese. Like REALLY really simple. Check out the steps below:

  1. Preheat the oven and then cook macaroni/elbow pasta until it's al dente. Drain and set aside.
  2. Grate the cheeses, mix them together, and add them to a large bowl.
  3. Pour in heavy cream, milk, and seasonings. Mix.
  4. Add macaroni to a 9x13 baking dish and pour cheese/milk mixture on top. Add cream cheese and sour cream and mix together again (I use my hands). Then bake for 35 minutes.

That's it. No, really, it's THAT simple. Baked Mac and Cheese in under an hour?! Yes. Get ready for an EPIC cheese pull too.

It took some time to get the perfect balance/combination of cheese but I finally nailed it. For this recipe, I used the five cheeses below:

what makes this dish so creamy?

It's a balancing act. Firstly, I know that there's a huge debate about using eggs in mac and cheese. The eggs are a binding agent which can make the mac and cheese kinda stiff (which is a good thing if that's your intent behind the recipe - I use eggs in my Old Bay Lobster Mac and Cheese!).

So, to keep this recipe nice and creamy, I omitted the eggs to prevent the mac and cheese from becoming hard while baking in the oven.

Also, I added liquids with the cheese to keep this baked mac and cheese nice and creamy and cheesy. I added heavy cream and milk and a little sour cream too for added texture, tang, and cream!

tips for Making the perfect baked mac and cheese

  • Use block cheese and shred the cheese with a grater. Pre-shredded cheeses are drier and tend to have additives in them. This may seem like a minuscule step but it makes the world of a difference!
  • Only cook pasta until it's al dente. If you cook the pasta as per normal, it'll be too soggy when you bake it in the oven!
  • If you want a crispy top, broil the macaroni and cheese for about 2-3 minutes once it's done baking in the oven. The crispy top give it a really nice crust!
  • When boiling pasta, add salt to your water. This enhances the flavor of the pasta! Also, do not rinse your pasta while draining. You want to keep all of the flavor in!

  • 9x13 baking dish


  • 16 oz Macaroni/Elbow Pasta
  • 1 cups Asiago cheese, shredded
  • 2 cups Mozzarella, shredded
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1 cup Colby Jack, shredded
  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 1 tbsp Thyme
  • 1 tbsp Garlic Powder
  • 2 tsp Chili Powder
  • ½ tsp Cayenne Pepper
  • ¼ tsp Nutmeg
  • ½ cup Sour cream 
  • 8 oz Cream cheese, room temperature
  • Salt and Pepper, as desired


  • Preheat oven to 350 degrees F. Boil pasta until al dente, according to package instructions. Drain pasta and set aside.
  • Combine shredded cheeses in a large bowl and then pour in heavy cream and milk on top. Add thyme, garlic powder, chili powder, cayenne pepper, and nutmeg and stir together.
  • Add macaroni to a 9x13 baking dish and pour cheese/milk mixture on top. Add sour cream and cream cheese to the baking dish and mix together until evenly distributed throughout. Season with salt and pepper as desired.
  • Bake for 35 minutes. For a browned top, broil for 2-3 minutes.
