To date, this is my favorite recipe. Without question. These peanut curry braised ribs are absolutely delicious and so easy to make. The ribs are seasoned and coated with onion powder, garlic powder, ginger, cinnamon, and a little bit of red pepper flakes. Braised them in the oven for about 2 hours. Then make the sticky peanut curry sauce which consists of peanut butter, a little curry powder, soy sauce, brown sugar, and warmed on the stovetop to reduce. When I tell you this is my new favorite recipe, I'm not kidding. It's so delicious!

so, how do you cook ribs?
These ribs specifically are braised. Braising simply means to cook slowly in the oven. Often when people braise, they also sear on the stove top and then cook in the oven. Either way works, just depends on what you're cooking. Typically when I braise meats, I do like to sear on the stove top. Mostly with an oil, such as olive oil, and an aromatic and an herb - like garlic and thyme or fresh rosemary. However, with this recipe, I wanted to make cooking these ribs as easy as can be while still preserving the moisture and tenderness of the meat and maximizing flavor.
So, I opted to simply season these ribs, cover them with aluminum foil and bake them for 2 hours at 275 degrees F. Covering the ribs with aluminum foil allows them to steam a bit and ensure that these are super tender. Which like who doesn't love juicy and tender ribs?!

what goes with peanut curry braised ribs?
Anything that your heart desires! We ate these with a side salad and a little bit of white rice. Because these ribs have so much flavor, I'd recommend pairing them with something that's a bit more neutral in taste. You really want these to be the centerpiece of your plate. Also, if you have left over peanut curry sauce, you can use the peanut curry as a salad dressing.
Honestly, the sauce is my favorite part. It's sticky, it has a lot of peanut flavor and a subtle hint of sweetness. I also topped the ribs with chopped mint leaves and chopped peanuts for added texture. It was amazing! So, what goes with peanut curry braised ribs? Anything you want! As far as beverages, I would drink this with a long island iced tea (if you're over 21 of course) or a creamy coconut juice. The creamy coconut juice would REALLY make these pop!

how long should you braise? what temperature?
The ribs should be braised at 275 degrees F for two hours and fifteen minutes. I found that this method is best. I tried braising another slab of ribs at 300 degrees and they weren't as tender. So, as I always say - low and slow is key! That's low heat cooked over several hours. In this case, two hours... and 15 minutes. lol I found that any longer made the ribs too dry and a little tough. And let's be clear, we want to avoid that at all costs.

pork or beef ribs?
This recipe uses pork ribs. If you're using beef ribs, you'll have to defer to your own judgement as to how to best cook them and what temperature is best and for how long. I've never cooked beef ribs before so I cannot advise anyone on that! lol If you do use beef ribs, you don't have to change any of the seasonings or sauce ingredients. Those can remain the same!
