what’s a trifle?

In terms of dessert, a trifle is a dessert layered with fruit, custard, jellies, and cream. It’s the perfect dessert because it requires very little technique or effort. Trifles typically consist of about three to four layers in a trifle bowl or mini cup, like this recipe.

I love enjoying trifles during the summer because you get the best in season summer berries that are perfectly ripe. This Mixed Berry Trifle in particular contains raspberries, strawberries, blueberries, and blackberries, whipped cream, and a delicious butter cake.

how do you make mixed berry trifles with butter cake?

Start by making the butter cake. Combine all of the dry ingredients and then wet ingredients, mixed together and bake for one hour to an hour and ten minutes. While the cake is baking, combine mixed berries in a large bowl and add lemon juice and sugar. Mix together and refrigerate until the cake is ready.

Once the cake has cooled, cut into cubes. Once you’re ready to assemble, begin making the whipped cream. Add heavy whipping cream, vanilla extract, and sugar to a stand mixer or a large bowl. Whip for about two to two and half minutes until stiff peaks form.

Layer your Mixed Berry trifles however you like! I like as many berries as possible so I started with the mixed berries as the first layer. Then I added the whipped cream, then butter cake, then more berries and whipped cream on top! Add a few mint leave for garnish, totally optional! I also added a few pomegranate aril that I had laying around the house, again, totally optional. Feel free to add whatever you like as garnish and dig in!

The order of your trifles doesn’t really matter. Get creative and have fun with layering!

can you make trifles a day before?

Absolutely! While it’s not a requirement, I actually recommend making these Mixed Berry Trifles a day prior to serving. This way, the flavors will have a chance to set and come together. The butter cake will soak up some of the whipped cream and mixed berry juices with time and it’s just amazing!

If you make these Mixed Berry Trifles a day prior, you MUST store in the refrigerator until ready to serve. If you don’t, it’ll get soggy and messy. We don’t want that!

what ingredients do I need to make mixed berry trifles with butter cake?

  • Mixed berries: I used raspberries, blueberries, strawberries, and blackberries!
  • Lemon Juice: to macerate the berries.
  • Cold heavy whipping cream: for the homemade whipped cream.
  • Salted Butter: from my favorite Minerva Dairy! Their butter is truly the best I’ve ever eaten!
  • Butter Cake: I provided the recipe to the butter cake below. It consists of a few simple ingredients – flour, butter, sugar, milk, baking powder, and eggs!

Mixed Berry Trifles with Butter Cake

Ingredients 

Butter Cake

  • 2 sticks Unsalted Butter, room temperature
  • 1 cup Sugar
  • 3 eggs
  • 2 tsps Vanilla Extract
  • 2 tbsps Whole Milk
  • 1 1/2 cup All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Kosher Salt

Mixed Berries

  • 1 cup Blackberries
  • 2 cups Blueberries
  • 2 cups Raspberries
  • 2 cups Strawberries, sliced
  • 1/4 cup Sugar
  • 1 Lemon, juiced

Whipped Cream

  • 2 1/2 cups Heavy Whipping Cream, cold
  • 1/2 cup Sugar
  • 1 tsp Vanilla Extract

Instructions 

  • Preheat oven to 350 degrees °F.
  • In a large bowl or stand mixer with the whisk attachment, beat room temperature butter and sugar together until fluffy. Add eggs, one at a time, beating each egg into the mixture before adding another. Add vanilla extract and milk and continue to mix until fully incorporated.
  • In a separate bowl, mix together flour, baking powder, and kosher salt. Add to wet ingredients and fold together with a mixing spoon or silicone spatula until flour is fully incorporated. Spray a 9×5 loaf pan with oil and coat with flour. Add cake batter and bake for 1 hour to 1 hour and 10 minutes, until a toothpick comes out clean.
  • While cake is baking, combine blackberries, blueberries, raspberries, and strawberries in a large bowl. Add juice from one squeezed lemon and sugar. Mix together and chill in the refrigerator while cake is baking.
  • Allow cake to cool completely. Slice cake and cut into cubes.
  • To make the whipped cream, add cold heavy whipping cream, sugar, and vanilla extract to a stand mixer with the whisk attachment or a large bowl using a hand mixer. Beat on medium high until stiff peaks form, about 2-2 1/2 minutes. Be sure not to over mix.
  • Assemble the trifle by adding a layer of berries, then a layer of whipped cream, and then cake. Add more berries and whipped cream on top. Garnish with mint.

Notes

  • You can use store bought cake, however, I highly recommend making this butter cake. It’s so good!

      I’m such a fan of trifles, and this is a favorite in the rotation now. Using mixed berries instead of just one type of fruit made for beautiful color and little pops flavor that we really enjoyed. The butter cake was also SO easy to make, and totally delicious. I adapted it for low carb and used an almond flour base. It was incredible.
