3/4cupUnsalted Almonds, roughly chopped
1/3cupPumpkin Seeds
2/3cupDried Cranberries
1/3cupDried Apricots, sliced
1/3cupshredded coconut
1/3cupHoney
3/4cupAlmond Butter
1tspCinnamon
1/2tspKosher Salt
Melted Dark Chocolate, optional
Instructions
Combine all ingredients together and mix. Refrigerate for 30 minutes to an hour.
Scoop 2 tbsps and roll into a ball.
Heat dark chocolate as per package instructions. Drizzle on top of energy bites.
