Honey Garlic Chicken with Peach Salsa is a quick and easy recipe that brings together so many delicious flavors! Honey and garlic come together with a peach salsa that's full of perfectly ripe cling peaches, herbs, and jalapeños for a little kick!
Ingredients
4Boneless Skinless Chicken breasts
2tbspsFresh Thyme
5clovesGarlic, diced
2tspsSmoked paprika
1/2cupOlive oil
3tbspHoney
1Lemon, juiced
Salt and pepper
Peach Salsa
215 oz cans California cling peaches, sliced
1jalapeño, diced
1/4cupcilantro, chopped
2tbspsfresh mint, chopped
1/2red onion, diced
1cupgrape tomatoes, cut into quarters
2tspsChili powder
2limes, juiced
3tbspsExtra Virgin Olive oil
Salt, as desired
Instructions
In a large bowl, combine thyme, garlic, smoked paprika, olive oil, honey, and lemon juice. Season chicken with salt and pepper and submerge in the marinade. Cover with plastic wrap and let the chicken sit in the refrigerator for 30 minutes to an hour.
Preheat oven to 425 degrees F.
Add 1-2 tbsps of olive oil to a skillet and warm over medium high heat. Sear chicken on both sides until browned. Add to a baking sheet and pour remainder of marinade on top. Cover with aluminum foil and bake for 25 minutes, until chicken is cooked thoroughly.
While chicken is cooking, chop peaches, jalapenos, cilantro, mint, red onion, and grape tomatoes. Combine in a bowl and top with chili powder, lime juice, extra virgin olive oil, and salt. Mix together.
