Slice apples thinly and add to a small saucepan. Add sugar, cinnamon, pinch of salt, butter, and vanilla extract. Cook over medium-low heat until apples become slightly softened, about 10 minutes. Remove from heat and set aside.
Preheat your waffle iron.
In a skillet over medium-low heat, and add ¾ cup of butter. Brown the butter. Butter will become foamy and begin to bubble. Stir occasionally and remove from heat when the foam begins to turn brown and you begin to see brown specs on the bottom of the pan. Allow to cool for 5 minutes.
