S'mores Stuffed Chocolate Chip Skillet Cookie
This S'mores Stuffed Chocolate Chip Skillet Cookie is a mix of your favorite summer treats - s'mores and chocolate chip cookies. Graham crackers, marshmallows, and chocolate all stuffed inside of a perfectly crispy chocolate chip cookie. It's simply delicious.

- 2 sticks Salted Butter, room temperature (227 grams or 1 cup)
- 1 cup brown sugar
- ½ cup sugar
- 1 tbsp vanilla extract
- 2 eggs
- 2 ½ cups all-purpose flour
- 1 ½ tsp baking soda
- ½ tsp salt
- 12 oz semi sweet chocolate chips (1 bag)
- 4-5 sheets Honey Graham crackers
- 12 oz regular sized marshmallows ( 1 bag)
Preheat oven to 350 degrees F.
In the bowl of a stand mixer using the paddle attachment, beat butter and sugar together. Add vanilla extract and then the eggs, one at a time.
In a separate bowl, combine flour, baking soda, and salt. Whisk together and add to the butter mixture and beat until combined, about 15-20 seconds. Then add 1 ½ cups of semi-sweet chocolate chips and fold together.
Add half of the dough to the bottom of a cast iron skillet. Top with graham crackers until the bottom layer is covered, about 4-5 sheets. Then add marshmallows to cover the graham crackers. Sprinkle in remaining chocolate chip cookies. Add remaining cookie dough to cover the marshmallows.
Bake for 20-25 minutes, until the top of the cookie is golden brown.
Let the cookie cool for 30-45 minutes to set.
