Ingredients
Sesame Meatballs
2lbsGround Pork
1tspKosher Salt, (more or less as desired)
1tspBlack Pepper, (more or less as desired)
1/4cupGreen Onions, (diced)
1/2Red Onion, (diced)
2tbsps Sesame Oil
2clovesGarlic, (diced)
1tspRed Pepper Flakes, (more or less as desired)
Spicy Peanut Sauce
1/2 cupCreamy Peanut Butter
1/2cupSoy Sauce
2tspRed Pepper Flakes
1thumbFresh Ginger, (peeled)
2tbspsSesame Oil
1/4cupHoney
Noodles
1packof Noodles, any kind
2Bell Peppers, (sliced)
1Zucchini, (sliced)
Sesame seeds, for garnish
Peanuts, for garnish
Fresh mint leaves, for garnish (optional)
Instructions
Combine all of the ingredients for the peanut sauce in a food processor or a blender and blend until smooth. Set aside. 1/2 cup Creamy Peanut Butter1/2 cup Soy Sauce2 tsp Red Pepper Flakes1 thumb Fresh Ginger2 tbsps Sesame Oil1/4 cup Honey
In a large bowl, combine all of the ingredients for the meatballs and mix well. Roll into little balls. 2 lbs Ground Pork1 tsp Kosher Salt1 tsp Black Pepper1/4 cup Green Onions1/2 Red Onion2 tbsps Sesame Oil2 cloves Garlic1 tsp Red Pepper Flakes
Over medium heat, add a drizzle of sesame oil to a large pan, add meatballs and cook for about 2-3 minutes on all sides, until golden. Remove from pan and add zucchini and bell peppers. Saute until the vegetables begin to soften and brown, about 5-7 minutes. 2 Bell Peppers1 Zucchini
Cook noodles according to box instructions. 1 pack of Noodles, any kind
Add meatballs and noodles back into the pan with the veggies, pour in sauce and toss so that all of the noodles are coated.
