Place pork into a crock pot slow cooker and coat all sides with seasonings. In a small bowl, mix together bbq sauce and chicken broth and pour on top of the meat. Cover with a lid and cook on low for 6-8 hours, or until fork tender. Shred the meat with a fork and remove from the slow cooker, draining off the liquid.
While the meat is cooking, make the homemade coleslaw. Add 1 tbsp of olive oil to a skillet over medium high heat. Add corn and cook until browned. Season with salt and pepper. Remove from the heat and add to a large bowl. Allow it to cool, then add coleslaw mix, and diced red onion.
In a separate small bowl, whisk together mayo, dijon mustard, sugar, apple cider vinegar, and celery salt and add to the corn slaw. Toss together until evenly distributed and cover with plastic wrap and refrigerate until ready to use.
Once the meat is finished cooking, preheat oven to 400 degrees F. Cut slider buns in half with a serrated knife and place on a baking sheet. sprinkle white cheddar cheese. Place rolls on the top rack and melt cheese for about 5-10 minutes.
Place the pulled pork on top of the bottom sides of the buns, then top with a drizzle of bbq sauce, charred corn coleslaw, pickles, and crispy fried onions. Place the top of the rolls on top and enjoy!
Notes
Make sure to drain off as much liquid from the coleslaw and pulled pork as possible prior to adding to the buns. This will prevent them from becoming soggy.
Do not separate the sliders until everything is assembled. This makes it much easier to put everything together and saves time!
These easy pulled pork sliders are best served fresh. If you'd like to make them in advance, prepare the meat, store in an airtight container until you're ready to assemble the sliders.
