Peach simple syrup made with fresh peaches, brown sugar, water, and lemon juice is a sweet and fruity syrup! It has deliciously fruity flavor with a rich, caramel-like notes. Peach syrup can be used to sweeten beverages like iced tea and cocktails, drizzled over fresh fruit or ice cream, or added to marinades and salad dressings for a fruity twist.
Rinse the peaches and thinly slice them. Be sure to remove the pit. Don't worry about peeling the skin.
Add water, brown sugar, and sliced peaches to a medium saucepan. Whisk together until the sugar dissolves and bring to a boil over medium heat and boil for 15 minutes. At the 15 minute mark, mash the peaches with a potato masher or fork. Continue to boil for another 20-30 minutes, until the syrup reduces and thicken.
Use a fine-mesh strainer to strain into a heat safe container. Allow the syrup to cool to room temperature (it will thicken as it cools). (Pro tip: use the cooked peaches on top of pancakes or french toast or puree it and spread on toast with butter. It's SO good!)
