This refreshing Blackberry Mojito cocktail is a beautiful take on a classic mojito for a berry twist, perfect for summer!

Makes 1 drink:
1/4cupBlackberries
1-2ozHoney, (add more for a sweeter drink)
6 Mint Leaves
1ozLime Juice
2ozWhite Rum
2ozClub Soda
Ice Cubes
Make a large batch:
2cupsBlackberries
1 cupMint Leaves
1cupLime Juice
1/2cupHoney or Simple Syrup, (add more for a sweeter drink)
1 1/2cupsWhite Rum
1 1/2cupsClub Soda

Instructions
How to make a single drink:
Add blackberries, honey, and mint leaves to a cocktail shaker. Muddle together for 10-15 seconds. Then add lime juice, white rum, and ice. Place the cap on top and shake for 10-15 seconds.
Pour into a serving glass (strain if you do not like pulp) and top with club soda. Add ice and garnish with fresh blackberries and mint.
Make a Large batch:
Add blackberries and mint leaves to a pitcher. Use a large wooden spoon and mash together. Add lemon juice, honey, white rum, and club soda. Mix together.
When ready to serve, add ice.

Make virgin mojitos by omitting the rum. You can also add extra blackberries and ginger ale in place of club soda to give this tasty cocktail extra sweetness!
If you don't have simple syrup or honey, just use 1-2 tsps of regular sugar instead.
