Preheat the oven to 350 degrees F. Line a 9x13 baking dish with parchment paper or aluminum foil.
Use a box grater/cheese grater to grate the onion into a large bowl, then add diced bell pepper, BBQ sauce, ketchup, worcestershire sauce, yellow mustard, eggs, panko, Lipton onion soup mix, and all of the seasonings. Add ground beef and mix together with your hands or a wooden spoon until everything is fully combined. 2 lb 80/20 Ground Beef
Place meatloaf into the baking dish. Shape into a 9x4 inch loaf/oval (this doesn't have to be perfect). Cover with aluminum foil and bake for 40 minutes.
While the meatloaf is baking, make the BBQ glaze. Combine BBQ sauce, ketchup, balsamic vinegar, brown sugar, and water in a small saucepan over medium low heat. Stir together until the sugar dissolves, about 5 minutes. Then add butter and stir until the butter is melted. 1/2 cup BBQ Sauce1/4 cup Ketchup1 tbsp Balsamic Vinegar1/4 cup Brown Sugar3 tbsp Water2 tbsp Butter
After 40 minutes, remove the aluminum foil and glaze the meatloaf with half of the BBQ glaze. Place meatloaf back into the oven and increase oven heat to 400 degrees F. Continue to bake for 15-20 minutes, until the glaze has caramelized and the internal temperature of the loaf has reached 165 degrees F.
Brush again with the glaze fresh out of the oven and let the meatloaf cool for 10-15 minutes before cutting.
