Creamy Heirloom Tomato Soup with Garlic Croutons

Heirloom tomatoes Coconut milk Fresh Thyme Basil Leaves Pesto Onion Parmesan Cheese Sourdough Bread Sage Garlic powder Shallot

HOW TO MAKE CREAMY HEIRLOOM TOMATO SOUP WITH GARLIC CROUTONS

Over medium heat, pour olive oil into an oven safe dutch oven and allow oil to warm. Combine shallots, onion, thyme, basil leaves, garlic, salt, and pepper and saute.

Add heirloom tomatoes to the mixture and put into oven to roast for 30 minutes.

Pour mixture back into the dutch oven and add pesto and Parmesan cheese and allow to simmer for about 25 minutes. 

For the Croutons: Preheat oven to 380 degrees F. Cut loaf of bread into cube size pieces and add to a large bowl.

In a food processor, add basil, sage, pesto, olive oil, garlic cloves, Parmesan cheese, salt and pepper. Pulse until chunky.
