Prosciutto wrapped Chicken with Peaches
Prosciutto wrapped Chicken with Peaches is the perfect summer dinner! It's easy, cheesy, and can be made in under an hour! This sweet and savory dish is sure to be a crowd pleaser!
Servings: 4 servings
- 2 chicken breasts, cut in half
- 6-8 slices of prosciutto
- 1 cup Gruyere cheese, shredded
- 1 tbsp onion powder
- Salt and Pepper, to taste
- 3 peaches, sliced
- 3 garlic cloves
- 2 tbsps brown sugar
- 1 tbsp thyme
- 4 tbsps butter
- 1 tbsp dijon mustard
- Cilantro, for garnish
Preheat oven to 400 degrees F.
Cut chicken breast in half and season with onion powder, salt, and pepper. Top with shredded Gruyere cheese and wrap with prosciutto. Add to a cast iron pan.
Slice thick slices of peaches and dice cloves of garlic add to the cast iron skillet.
Top peaches and chicken with dried thyme, brown sugar, and sliced butter.
Bake for 25-30 minutes.
Remove peaches and chicken from the skillet and place skillet on stove over medium heat. Allow juices to reduce and thicken. Remove from heat and add dijon mustard and stir. Pour on top of chicken and peaches.
