Equipment

  • 12-inch cast iron pan

Ingredients

  • 2 Chicken Breasts (cut in half)
  • 8 slcies Prosciutto
  • 1 cup Gruyere cheese (shredded)
  • 1 tbsp onion powder
  • Salt and Pepper, to taste
  • 3 Peaches (sliced)
  • 3 cloves Garlic (diced)
  • 2 tbsps Brown Sugar
  • 1 tbsp Fresh Thyme (stems removed)
  • 4 tbsps Salted Butter
  • 1 tbsp Dijon Mustard
  • Cilantro, for garnish

Instructions

  • Preheat oven to 400 degrees F.
  • Cut chicken breast in half and season with onion powder, salt, and pepper. Top with shredded Gruyere cheese and wrap with prosciutto. Add to a 12-inch cast iron pan.
  • Slice thick slices of peaches and dice cloves of garlic add to the cast iron skillet.
  • Top peaches and chicken with dried thyme, brown sugar, and sliced butter.
  • Bake for 25-30 minutes.
  • Remove peaches and chicken from the skillet and place skillet on stove over medium heat. Allow juices to reduce and thicken. Remove from heat and add dijon mustard and stir. Pour on top of chicken and peaches.
  • Eat!
