- 1 lb brussels sprouts
- 4 oz breakfast sausage
- salt and pepper, to taste
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- 2 tsp fresh rosemary, diced
- 3 tbsp salted butter
- 1-2 pieces burrata
- pomegranate arils
Preheat oven to 425 degrees F. Cut brussels sprouts in half and add to a parchment lined baking sheet, cut side down. Break up sausages into small pieces and add to baking sheet between brussels sprouts. Drizzle olive oil over sausage and brussels sprouts and add salt and pepper to taste.
Bake in oven for 20 minutes.
While brussels sprouts are baking, add apple cider vinegar, butter, fresh rosemary, and honey to a saucepan. Bring to a boil. Boil for about 3 minutes then simmer for 5 minutes.
Once brussels sprouts are finished roasting, drizzle sauce on top. Add burrata and pomegranate arils. Add salt and pepper to burrata with a little olive oil.
