Mixed Fruit and Nut Energy Bites

  • ¾ cup Unsalted Almonds, roughly chopped
  • cup Pumpkin Seeds
  • cup Dried Cranberries
  • cup Dried Apricots, sliced
  • cup shredded coconut
  • cup Honey
  • ¾ cup Almond Butter
  • 1 tsp Cinnamon
  • ½ tsp Kosher Salt
  • Melted Dark Chocolate, optional


  • Combine all ingredients together and mix. Refrigerate for 30 minutes to an hour.
  • Scoop 2 tbsps and roll into a ball.
  • Heat dark chocolate as per package instructions. Drizzle on top of energy bites.
