Mixed Fruit and Nut Energy Bites
u003cbru003eMixed Fruit Energy Bites is a gluten free, grain free paleo recipe that comes together in about 10 minutes with healthy, clean, and whole ingredients!
Servings: 10 servings
- ¾ cup Unsalted Almonds, roughly chopped
- ⅓ cup Pumpkin Seeds
- ⅔ cup Dried Cranberries
- ⅓ cup Dried Apricots, sliced
- ⅓ cup shredded coconut
- ⅓ cup Honey
- ¾ cup Almond Butter
- 1 tsp Cinnamon
- ½ tsp Kosher Salt
- Melted Dark Chocolate, optional
Combine all ingredients together and mix. Refrigerate for 30 minutes to an hour.
Scoop 2 tbsps and roll into a ball.
Heat dark chocolate as per package instructions. Drizzle on top of energy bites.
