Ingredients

Crumb Topping

  • 1 cup all purpose flour
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp kosher salt
  • ½ cup unsalted butter (melted)

Apple Cake

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • tsp cloves
  • ½ tsp kosher salt
  • ¾ cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup unsalted butter (melted)
  • ½ cup whole milk
  • 1 lb granny smith or honeycrisp apples

Instructions

  • Preheat the oven to 350 degrees f. Spray a 9-inch springform pan with nonstick baking spray and set aside
  • Make the crumb topping: Combine melted butter, brown sugar, cinnamon, kosher salt, nutmeg, cloves, and salt in a small bowl and give it a mix. Then add all purpose flour and pinch together until crumbles form. Place in the refrigerator. 
  • Peel, core, and slice the apples into chunks.
  • In a large mixing bowl, combine flour, baking powder, cinamon, nutmeg, ground cloves, and kosher salt. Whisk together.
  • In a separate large bowl, combine white sugar, brown sugar, melted butter, eggs, vanilla extract, and milk. Whisk together for two minutes, the add the dry ingredients and fold together until combined and all lumps of flour are gone.
  • Add ¾ of the apple chunks to the batter and fold until just combined. Pour batter into the prepared pan. Place the remaining apples and crumble topping on top of the cake.
  • Bake for 1 hour and 10 minutes, until the streusel is golden brown nd a toothpick comes out of the center of the cake clean or with just a few crumbs.

  • Allow the cake to cool in the pan for 20 minutes, then remove onto a wire rack to cool completely. Dust with a little powdered sugar before serving.

Notes

Tips
  • If using a regular cake pan, be sure to line it with parchment paper to make it easier to remove from the pan. Also, be sure to use a 9-inch cake pan
  • I recommend using an apple corer and peeler to get uniform thin slices. It also cuts down on peeling and cutting the apples by hand. 
  • If the edges of the cake are browning too quickly, cover the edges with aluminum foil and continue to bake until it's done.
