Preheat oven to 375 degrees Fahrenheit.
Cut 1.5 apples into small cubes and save the remainder for the topping. Optional: if you would like to peel the skin or leave it on, it’ll be delicious either way!
In a stand mixer, combine flour, sugar, brown sugar, baking powder, salt, cinnamon, and ginger. Mix dry ingredients for about 1 minute.
In a separate bowl, add vanilla extract, coconut milk, bourbon, and vegetable oil and whisk until ingredients are fully incorporated.
Add wet ingredients to dry ingredients and mix. Fold in cubed apples with a spoon/spatula.
Line a cast iron skillet with parchment paper and pour in batter. Slice the remainder of the apples thinly and layer them on top of the batter (as pictured above).
Bake for 1 hour or until a toothpick comes out clean.
For the Chai drizzle, combine honey or maple syrup, coconut milk, and chai spice and mix together with a spoon. Drizzle over cake when done.
