Grilled Pineapple Chicken Skewers with Cilantro Lime Rice
These Grilled Pineapple Chicken Skewers are packed with sweet and savory flavor. Loaded with fresh bell peppers, pineapples, and perfectly seasoned chicken. Pair these skewers with cilantro lime rice and you've got a quick and healthy meal that's perfect for both cookouts and a quick weeknight meal.
Servings: 10 servings
- 2-3 Boneless Skinless Chicken Breasts
- 1 cup Pineapple Chunks
- 4 Bell Peppers, assorted colors
- 2 tsps Smoked paprika
- 2 tsps Garlic Powder
- 1 tsp thyme
- 1 tbsp Honey
- 1 tbsp Apple Cider Vinegar
- Drizzle of Olive Oil
- Salt and Pepper, to taste
Cilantro Lime Rice
- 1 ½ cups Jasmine Rice
- 1 13.5 oz can Full Fat Coconut Milk
- 2 limes, juiced
- ½ cup water
- 1 tbsp sugar
- ¼ cup Cilantro, diced
- salt, as desired
If using wooden skewers, soak skewers for 30 minutes prior to using.
Cut peppers and chicken in to bite size pieces. Set peppers aside and add chicken to a large bowl. Add smoked paprika, garlic powder, thyme, honey, apple cider vinegar, olive oil, and salt and pepper to chicken. Mix together to combine.
Add chicken, peppers, and pineapples to a skewer. Repeat until all ingredients are used.
Spray a with oil and add 2-4 skewers to the pan. Cook on each side for about 3 minutes, totaling 10 minutes. Cook until chicken is cooked thoroughly.
For the cilantro rice, combine all ingredients in a rice cooker and cook according to your machine's insructions.
