Chop apples and pears into cubes and set aside. (if using canned pears, see notes section) In a large bowl, combine buttermilk, vanilla extract, eggs, brown sugar, lemon zest, and melted butter. Whisk together until smooth.
In a separate bowl, combine flour, baking powder, salt, cinnamon, ground ginger, and nutmeg. Mix together and add to the wet ingredients. Also add in the chopped apples and pears. Fold together until dry ingredients are fully incorporated.
In a skillet, add about 2 inches of neutral oil and heat on medium low to medium. Once oil is hot (preferably reaching 350-360 degrees F if using a candy thermometer), spoon 2 heaping tablespoons of batter into skillet. Cook until golden brown on both sides, about 3-4 minutes per side.
Once cooked, remove from oil and set aside on a cooling rack or a paper towel to allow oil to drain.
Make the honey glaze: add honey, butter, powdered sugar, milk, cinnamon, and a pinch of salt to a small sauce pan over medium low heat. Whisk together until a glaze forms and remove from heat (about 4-5 minutes).
Brush apple pear fritters with honey glaze on a cooling rack.

If using canned pears, use 3 15 oz cans of sliced pears. Be sure to drain the syrup!
