Garlic Rosemary Pork Chops with Roasted Grapes

Ingredients

  • 4 bone-in pork chops 
  • 1 tbsp rosemary 
  • 1 tbsp garlic powder 
  • 2 tsp smoked paprika
  • Salt and pepper, to taste
  • Olive oil
  • 2-3 tbsps salted butter
  • 2 sprigs fresh thyme
  • 3 cloves garlic, diced
  • 2-3 cups red grapes
  • 2 tbsps honey

Instructions

  • Preheat oven to 425 degrees F.
  • Season pork chops with salt and pepper. Combine rosemary, garlic powder, and smoked paprika in a small bowl and mix. Coat both sides of the pork chops with the seasoning mixture.
  • Heat your with olive oil and melt butter over medium heat. Once warmed, add pork chops and sear on both sides for about 3-5 minutes. Reduce heat to medium low and add fresh thyme and garlic. Cook pork chops until well done and remove from pan and set aside.
  • Add grapes to the pan and spoon the juices in the pan over the grapes and drizzle grapes with honey. Roast in the oven for 20 minutes.
  • Add pork chops back to the pan and nuzzle between grapes and serve.
