5-Minute Chunky Vegan Queso

Ingredients

  • ¼ tsp chili powder
  • ½ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • 1 tsp cumin
  • 2 cloves garlic
  • 5 tbsps nutritional yeast
  • 1 tbsp soy sauce
  • 1 cup water
  • ¾ cup PB2 Cashew Powder
  • ½ cup Rotel
  • Cilantro, for garnish
  • Jalapenos, for garnish

Instructions

  • Combine chili powder, cayenne pepper, smoked paprika, cumin, garlic cloves, nutritional yeast, soy sauce, water and PB2 cashew powder in a food processor. Blend until smooth, about 10-15 seconds.
  • Pour queso into a bowl and stir in rotel. Garnish with cilantro and jalapenos, optional.
