Ingredients

  • 2 Vine ripe tomatoes , diced
  • 5 cloves Garlic , diced
  • 10 Basil leaves , chopped
  • 2 tbsps Olive oil
  • 2 tbsps Balsamic Vinegar
  • cup Mozzarella Cheese
  • Salt and Pepper
  • Parmesan Cheese , for topping (optional)

Instructions

  • Preheat oven to 400 degrees F. Slice your baguette/bread into thick slices with a serrated knife. Place the slices of bread onto a large baking sheet. Drizzle a bit of olive oil on top and sprinkle with salt and black pepper. Toast in the oven for about 10-15 minutes.
  • While the bread is toasting, make the tomato topping. Combine diced tomatoes and garlic, mozzarella, chopped basil, olive oil, balsamic vinegar, and salt and pepper and toss together in a bowl. Place in refrigerator until ready to use.Cut a garlic clove in half and rub each piece of the toasted baguette.
  • Use a slotted spoon to spoon tomato mixture on top of the bread. This helps prevent too much liquid getting onto the bread. Top with flake salt, balsamic glaze, grated parmesan, and flake salt!

Notes

Tips
Although this recipe only requires a few simple ingredients and is easy to make, there are a few tips that really make this an excellent bruschetta.
  • Try to use the freshest ingredients that you can find - this includes everything from freshly cracked black pepper to fresh basil and tomatoes etc.
  • If you have time, toast the bread on the grill instead of the oven. This adds SO much flavor to the dish!
  • If you're using larger tomatoes, try to remove as much of the seeds as possible.
  • Use your favorite garlic bread if you're having a hard time finding a baguette.
  • Allow the topping to sit in the refrigerator at about 10 minutes so that the flavors can marinate and come together.
Substitutions
  • Use gluten-free bread for a gluten free option.
  • Try using a vegan mozzarella for a vegan bruschetta with mozzarella!
