Blackberry Mojito

Ingredients

Makes 1 drink:

  • ¼ cup Blackberries
  • 1-2 oz Honey (add more for a sweeter drink)
  • 6 Mint Leaves
  • 1 oz Lime Juice
  • 2 oz White Rum
  • 2 oz Club Soda
  • Ice Cubes

Make a large batch:

  • 2 cups Blackberries
  • 1 cup Mint Leaves
  • 1 cup Lime Juice
  • ½ cup Honey or Simple Syrup (add more for a sweeter drink)
  • 1 ½ cups White Rum
  • 1 ½ cups Club Soda
  • Ice Cubes

Instructions

How to make a single drink:

  • Add blackberries, honey, and mint leaves to a cocktail shaker. Muddle together for 10-15 seconds. Then add lime juice, white rum, and ice. Place the cap on top and shake for 10-15 seconds.
  • Pour into a serving glass (strain if you do not like pulp) and top with club soda. Add ice and garnish with fresh blackberries and mint.

Make a Large batch:

  • Add blackberries and mint leaves to a pitcher. Use a large wooden spoon and mash together. Add lemon juice, honey, white rum, and club soda. Mix together.
  • When ready to serve, add ice.

Notes

  • A couple great ideas on how to spruce up this blackberry mint mojito, add blackberry syrup in place of honey! It'll intensify the blackberry flavor. You should be able to find this at your local grocery store or liquor store.
  • You can also use a homemade simple syrup in place of honey. Here's how to make your own. It's a great thing to have around for the perfect drink.
  • Make virgin mojitos by omitting the rum. You can also add extra blackberries and ginger ale in place of club soda to give this tasty cocktail extra sweetness!
  • If you don't have simple syrup or honey, just use 1-2 tsps of regular sugar instead.
