Elotes Fries

Mexican Street Corn Fries are inspired by one of my favorite foods - Elotes! These Elotes Fries have a delicious crema with lime juice, topped with cotija cheese, and cilantro. It's a recipe that you will LOVE!

Ingredients

  • 3 large sweet potatoes
  • 1 tbsp garlic powder
  • 2 tsps chili powder
  • 1 tsp smoked paprika
  • ¼ tsp cayenne powder
  • Lime zest, optional
  • 15 oz can corn
  • Cilantro, for garnish
  • Cotija, for garnish
  • red pepper flakes, optional

Crema

  • ¾ cup sour cream
  • ¼ cup mayo
  • 2 limes, juiced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • ½ tsp red pepper flakes, optional

Instructions

  • Preheat oven to 425 degrees F. Cut sweet potatoes into the shape of french fries. Combine garlic powder, chili powder, smoked paprika, cayenne pepper, and lime zest in a small saucer and mix together. Add seasoning to sweet potato fries, ensuring every fry is coated. Add salt and pepper to taste.
  • Add sweet potato fries to a baking sheet (you may need two baking sheets to ensure that baking sheet is not crowded). Drizzle with olive oil and bake for 15 minutes. Remove from oven and flip sweet potatoes and continue to bake for another 10-15 minutes.
  • While fries are baking, drain canned corn and add to a skillet to brown, about 5-8 minutes.
  • For the crema, combine sour cream, mayo, lime juice, garlic powder, onion powder, chili powder, and red pepper flakes. Whisk together until smooth.
  • Once fries are finished baking, top them with the corn, add crema, cotija, and sprinkle with freshly chopped cilantro and red pepper flakes (optional) on a serving dish.
